4 slices of thick-cut bacon, sliced (about 113g or 4oz total)
Canned refried beans (1 15oz/425g can)
Fresh lime juice (from 1 lime)

1 medium russet potato (about 200g)

It's not uncommon for me to eat breakfast for both breakfast and dinner on the same day. Something like a full English or American diner breakfast in the morning and then eggs benedict for dinner. It's hard to beat breakfast dishes.

We made a variation of a couple of these for breakfast. Chorizo, potatoes and onions, eggs, and the corn tortillas with oaxacan cheese melted on them. Serve with tomatillo salsa. Best breakfast ever!
I love this simplicity. Everyone thinks this is hard, but it’s so simple to produce. It’s like guacamole, you can do a case in 20 minutes and worry about the rest of your prep. Joy is making stuff fresh, but we all have time limits, give it your best and you will be happy.
The last one reminds me of "revuelto de chorizo" popular here in Spain, just in taco-fied. Chorizo and eggs are a match made in heaven

Anyone can make in 15 minutes before they get to work???
Time to shred the potato, grate it, squeeze out the water, heat the pan (all of this 5 mins?), 8-10 mins to crisp the first side (quoted from the video), 2-3 mins frying on the back side, break apart and repeat for 8-10 minutes, fry an egg (3 mins?), building the taco (2 mins? Assume people just don't have chopped coriander to hand) and all of this can be done in 15 minutes? Just doing the two sides of the potato alone takes 16 minutes, as quoted in the video!

I make large batches of lower brow tacos for myself(egg, hashbrown, crumbled breakfast sausage and cheese, on a flour tortilla), which I freeze then reheat. They are decidedly not as good when reheated but they're like 85% of the way there. I'll have to give these a try!

Ok, tried the refried bean and bacon taco today and it was phenomenal, even without the pickled red onion which I haven't made yet today but will for the rest of my breakfasts this week. I am not sure why I had never doctored up canned refried beans before, but that is a game changer! The crispy bacon pieces were the perfect counterpoint to the soft, creamy beans and egg. My new favorite breakfast!
I keep pickled red onion in my fridge. I make mine by thin slicing red onions and putting them in a container with fresh squeezed lime juice. They're easy, and delicious. You can add sliced jalapenos as well, but not everyone in my household likes spice, so I keep them separated.
Saturday? Maybe. Sunday? Yes. A weekday morning before work? Never!

Have you seen the breakfast smash tacos? Same idea as a smash burger, but you smash sausage meat with a taco instead. Seems like it would fit in this video pretty perfectly.

I just made the hash browns, and they were better than any hash brown I’ve ever had. I fried up some bacon while I was shredding the potatoes and then did the hash browns in a mix of bacon grease and vegetable oil.
I’m definitely gonna try making the tacos tomorrow.

My go-to non-stick pan is hex-clad. Used only for eggs. Had for a year. Advantage you can use metal utensils as long as you don't really grind those utensils in. Pull the handle cover it's now oven safe.

You are actually closer to authentic by using corn tortillas than flour for tacos, flour are used mostly for quesadillas and burritos in the north of Mexico
It’s like Weeknighting for breakfast…I could go for a Weekmorning low-prep breakfast/brunch series. It’s definitely a place I struggle now that I am working from home.
The point about the store bought pico bears repeating. Sometimes good enough is good enough, especially with a time crunch. Put your time and effort where it will make a bigger difference.
Diced Green Chilies will add a nice flavor accent to any of those breakfast tacos, but especially the chorizo one.

My local Sprouts (kinda like a Whole Foods) sells this bar called ‘Fillo’s Walking Tamale’. Initially when I first got it, I thought it tasted like a corn-flavored soggy diaper: So of course I now love it and grab a bar or two every time I go. My store stocks Bean Salsa Verde, Bean Salsa Habanero, and Mexican Chocolate Almond.
Perhaps you have a tamale recipe you’re working on? With a bonus add-on of just the corn part in a bar form? That’d be an awesome snack to take to the pool. (Usually my bar doesn’t last the trip home from the store)
The best breakfast taco I've ever had had smoked sausage for the meat component -- hot dogs / sausages are *very* common in certain parts of mexico, even moreso than tacos in some places. Anyways: smoked sausage medallions, scrambled egg, raw white(?) onion, cilantro, and some generic habanero hot sauce on a tiny flour tortilla. One of the best things I have ever eaten
I know it's just corn tortillas here, but shoutout to Lorn on the gluten free side. I've got Celiac and I'm a huge fan of your videos and how you show ways to work around gluten. Obviously it's a touch more complex in the other videos, but keep it up!
