How The Restaurant Business Was Invented?

  • You’ve always been able to buy cooked food but the concept of a restaurant is only about 200 years old. And the man who really started the boom was Georges Auguste Escoffier.

    Today, we’re going to look at the innovations Escoffier brought to cooking and dining and also examine why restaurants are often said to be the hardest business of all.
    The word restaurant means “restorative” and likely refers to rich broth soups that would restore people’s energy and health. There’s a claim in France that the first restaurant appeared in 1765, run by a Mr Boulanger. But there’s no actual evidence for this.
    Here’s what we do know; many people in the cities wouldn’t have had their own kitchen and would have either bought cooked meals from the inns and taverns or whatever was available from street vendors. In cities like Paris, there were strict guilds and rules so a vendor would have been forbidden from selling a range of foods. For the aristocracy, the fine dining was mostly found in the great mansions and palaces, or in hotels. However, after the French revolution, at the end of the 18th century, many of those aristocrats took a trip to the guillotine.
    Before Escoffier, being a chef was not a very attractive job. You were still a servant, the kitchens were hot and it was pretty dangerous. And for diners, the few restaurants that existed were chaotic; food would be inconsistent and dishes would come out in a very haphazard order.

      A Western bias on the origin of restaurants. If you look up Wikipedia on 'restaurant', you'd find the earliest recorded presence of restaurants in Egypt (512 BCE) or even this comment, 'Early eating establishments recognizable as restaurants in the modern sense emerged in Song dynasty China during the 11th and 12th centuries.'

    OMG, Chef de Partie is NOT in charge of pastry. Che de Partie is a station chef, and the chef in charge of pastry and desserts is the Patissier. However, I like the video

    Everything i have heard on the internet that Mr.Boulanger is the man who started the First Restaurant. Only in this video i watched claims Georges Auguste was the inventor. Im confused. but thanks alot

      A Western bias on the origin of restaurants. If you look up Wikipedia on 'restaurant', you'd find the earliest recorded presence of restaurants in Egypt (512 BCE) or even this comment, 'Early eating establishments recognizable as restaurants in the modern sense emerged in Song dynasty China during the 11th and 12th centuries.'

    Chef de partie is not the one in charge of pastry. that's the Chef Patissier.

      Just one fact you got it wrong however. The concepts of restaurants originated as far back as ancient Rome, and more popularly, ancient China. They started it first long before France did.

      I think there were McDonald's back then but apparently the menu was nowhere near as diverse as it is today only consisting of happy meals, big macs, quarter pounders fries and cokes and didn't operate 24 hours!

      @@frankmundo4300very dark, literally? How so? You understand that we call the Middle Ages “the dark ages” because there is very little written historical record compared to other eras in history? Leaving a time that was not illuminated by the written record.
