There are many videos on RUclips that are full of hyperbole. As a chef of over 40 years experience, I can tell you now that every word on this film is true. Escoffiers influence on our eating habits world wide cannot be overestimated.

Auguste Escoffier is also credited with codifying the complex recipes of Marie -Antoine Careme. I believe it was Careme who created the 1st mother sauces. They were later consolidated to 5 mother sauces.

His name is pronounced Au-goost not August.
If his last name is pronounced with a French accent, so must his first.

Auguste didn’t have tattoos. He had taste, creativity and, most important, a healthy set of brains.
None of you can relate to him.

Comparing AE to Steve Jobs in unfair. SJ was a visionary and a businessman, for sure but he was neither a technician or organiser. AE was all of that. And AE would probably never have employed anyone with visible tattoos or at least kicked them out had he become aware of them.
