English Steak & Kidney Pie

  • In this video I show you how to make the best Steak & Kidney Pie you've ever tasted. Coming from Yorkshire in the North of England where, together with Lancashire also in the North of England they make the finest savoury pies in the whole world. The recipe is a simple one, no fancy ingredients, no exotic herbs or spices, just down-to earth everyday items that produce a most extraordinary finished product you will love.
    Ingredients:
    For the filling
    750g beef (cubed in 2.5cm) I use chuck/crop steak see my tips below
    300g beef kidney (cubed in 2.5cm)
    1 medium sized onion chopped
    50g beef dripping see my tips below
    500ml beef stock (fresh, carton or a made up stock cube are all OK)
    Sprig of fresh thyme
    2 bay leaves
    Flour for coating the meat.
    Salt, pepper and mustard powder
    Dash of Worcestershire sauce
    For the pastry
    500g plain flour
    125g lard
    125g butter or margarine
    1 level tsp baking powder (NOT baking soda)
    85g cold water see my tips below
    My Hints & Tips
    I always use beef from the front end of the animal because it has a nice amount of fat which gives you flavour (NO Fat NO Flavour).
    Also I use Beef dripping when I'm cooking beef, but you can substitute lard or any oil you prefer.
    As for the beef stock, in the video I use fresh beef stock, but you can use shop bought or make up a beef stock cube, use whatever you have to hand.
    You will also notice the absence of vegetables in my recipe with the exception of an onion, this is because I want to taste the full flavour of the beef and kidney, you can always serve vegetables on the side if you so wish.

    Mr Paul, you’ve just made me very nostalgic! I still have a couple of bone handled knives like yours which I inherited from my dad! Also, my mom made steak and kidney pies when I was a kid. I’m now 72 years old.

I'm 75 and the knives you see in the video were in use in my fathers shop when I started there when I was 15 The knives were made in Sheffield, South Yorkshire by The Viners cutlery company and I still have the whole canteen of cutlery they came from and it's dated 1924.

      Hi Paul, my mother worked for Joseph Rogers on Pond Hill, Sheffield as an Etcher. I also grew up with yellow handled cutlery.
      BTW just spent New Year's Eve doing the filling for Steak and Kidney pies tomorrow. Happy New Year mate.👍

    Brings back so many memories...... was my favorite thing my mother made... she used to keep the kidney on one side and the beef on the other for those who didn't want kidney... and she would slice potatoes very thinly and put on top of the meat before covering with the dough.... Thanks for this!!!

    Ive been living in Germany for the last 30 year and really miss Steak and Kidney Pie. Once when I asked for beef kidney, the butcher said, 'What ? thats dog food !!' So I gave her a small 'woof' went somewhere else :-) Now I have found a sympathetic butcher who is going to get me some beef kidney for next week. Thanks for the film -

    My mum used to make steak and kidney pudding, it was so awesome but I’ve never tried using suet. I’ve always just made steak and kidney pies and they are beautiful. Mine are a little different from yours but I’m definitely going to try and make my next pies like yours cos they looked so nice and they’ve made me so hungry, think I’ll be trying them very soon, I can’t wait.

      My Irish Grandma made the best steak and kidney pie I've ever tasted.

    I just followed this simple recipe; my family were impressed. As a personal choice, I put it under the broiler for 5 minutes at the end, to crisp up the top, but the base recipe is perfection, and so clearly explained. Thank you.

    Proper pies,just like the old days,beef dripping not vegetable oil,plenty of kidney,you would think it was expensive the amount they use in the bakers these days,well done Mr Paul 👍

      You won't believe this, but just before reading your comment I was busy sorting out several small dishes of Beef dripping I had saved into one pot. I was very fortunate that my step father had 5 Pork butchers shops, so I did learn a lot about meat before I started baking. Thanks fir taking the time to comment Steve.

      Hi Bob, it's been a few years since I was in Bradford, I think the last time was in 2003 when I flew from Spain to Manchester, then to Bradford to enter the Northern Butches Sausage ads Pork Pie competition, I think it was at the Ibis Hotel.     Hello Mr. Paul, my Mom used to make these, but Mom can’t remember the recipe any longer. I think she used to make them in a smaller steel “cup” which she put in a pan of water to cook in the oven. Wrapped in a cloth napkin. Have you heard of that technique? They’re both from Lancashire. I’ve not found a way to replicate her recipe. I think this is pretty close, though. I seem to remember she used suet for her pastry. Do I ask the butcher for beef kidney? I don’t think I’ve seen that anywhere in the grocery story. Watching from Canada. Thank you for sharing

      @@MrPaulsPantry it was wonderful. I used calf kidneys and they were tender and flavorful. I am getting more kidneys from my rancher friend very soon so I can make it again. I will have a good supply after we are finished butchering the cows they need butchered. I help butcher and I get the kidneys and other meat. Win, win.

    The pies look delicious! I've not been great at making pies before as the pastry always gets a bit tough or it goes soggy etc but with all those great tips I'll give this one a try :)

    I will try this recipe looks yummy. One thing though, adding flour like you did is a rookie mistake. You are looking for lumpy gravy. Suggest putting the flour in a very small amount of Luke warm water dissolving the flour and then add it to the dish. No more lumps

    Absolutely fabulous video and recipe ,I'm sat watching you with my four French bulldogs and we are ALL drooling.I love pies I believe they are a craft I can not seem to master.Unfortunately I have completely ceased buying them ,I recently tried Ocado Waitrose and M&S and they were all filth ( in my opinion) .They simply MUST hire a specific staff member whose job description is to add gristle and lumps of fat !!!! It drives me crazy.Maybe they need YOU to show them just how it's done,take care.

    Hi Paul looks just like we used to getting home from the fish and chip shops before Phukers came into being, meant to ask you if you’ve ever heard of hotcakes as a young child my mother used to get them from a man with a bicycle with hot box on it, used to deliver every night about 4 o’clock it was a non-crispy floury bap type thing which was still hot when delivered we cut them open then sit round and have them for tea with some margarine in those days, but they were absolutely delicious. Any thoughts. Please let me know, great videos very simple which is best for me with thanks, Rick

      Hi Rick, Although as a kid I heard of Hot Cakes but as we were travellers stopping in the leafy lanes of the UK we didn't see anyone selling them. From what people have told me over the years they sound like a Barm Cake and the saying " Sold like hot cakes" came from them as they could only carry a small amount or they would go cold, so more often than not they were sold out very quickly. Sorry I can't be more help.

      @@MrPaulsPantry hi Paul, yes, they’re sort of very soft, and flowery as I said delivered by men on bicycles with a hot box on the front, my father was an electrical engineer who worked on nuclear power stations all around the country, so we travel in a caravan, moving from site to site, every 18 months, more often than not travellers would join us on the site so I spend my youth playing the travellers children good times.     I remember when I was young we could buy steak and kidney pies in our grocery store.
    Unfortunatly I haven't seen any in decades.
    Even organ meats aren't as easy to buy these days either.

      Sorry, you can't make a Steak & Kidney Pie without meat. This is a traditional recipe and I've never tried to change it. f you add vegetables to the meat then you'll compromise the beef flavour. May I suggest you search for a different recipe.     Hello Mr Paul. I just found you today. To say that I am very happy about that would be an understatement! I recognised your accent right away as I spent two years in Yorkshire (Pontefract area) as a teenager. I have a question about the steak and kidney pie. After you added the beef broth the mixture looked very liquid. How/when does it change into a nice thick gravy like you have in your pie?
    Also, I have a question/request: when I lived in Yorkshire I used to eat the most wonderful custard pies. Do you have a recipe and demonstration for them? If so I would be eternally grateful. Thank you.

      Hi There, such a coincidence, just before we came to Spain, many years ago, we were living in Hemsworth, just a few miles up the road from Pontefract. As for the gravy, well it's because during the long cooking process as the liquid evaporates the gravy thickens, also don''t forget, the filling has to get completely COLD before it goes into the pastry, so it's even thicker then. I hope this helps. NOW for the Custard pie (no such thing) anything without a lid is a TART (Custard Tart) I don't have a video as yet, but it's on my to-do-list.       Hello Carol, they are a left-over from my bakery and just using them up, although here in Spain I can buy quite a selection of foil dishes in the supermarkets. In the bakery we had them made to fit whatever tins we were using just to make it easier for the customer to carry home.       Hi Ray. I'm afraid I've never tried it as we always baked these fresh daily in the bakery, sorry. You could try but it will probably be trial and error as far as the baking time is concerned, depending on the size of your pie

    Looks amazing! Not had steak & kidney pie for a long time. So will give your recipe a go.
    Just like me you weigh water. Those measuring jugs are just useless and inaccurate.
    Could I just ask about the fat for the pastry. You used half and half, is this because it gives a better result or is that years ago it was cheaper to do half and half? I use all butter for my pastry, and it has a lovely flavour.

      Hello Elaine, NO, years ago in the bakery we always used ALL Lard because it's a much better shortening than butter or Margarine. I'll let you into a secret, I personally use all lard myself even today 60+ years on. Half & Half gives both good shortening and flavour. Hope this helps.

      I just love the old-fashioned way of cooking and I am always searching for recipes.
      Proper food in my opinion. Good food can't be rushed and takes time to do, but always worth it in the end.
      Unlike the fast rubbish that is around today. Do you have a recipe for good old-fashioned meat and potato?
      Also you look like the kind of gentleman who would love good old-fashioned sage and onion with his Sunday Roast - would you happen to have a recipe for stuffing? My mum always used Paxo - and I know people will roll their eyes at it. But it is good as a base to start with and then add extra things to it, like fresh sage and gently cook some onions to add to it. By the way your Scotch Pies look delicious too :) Great tip to leave the pastry over-night!!

    My recipe came from England handed down generations. I like this recipe but I've never added onion, I use carrots. I cut the kidney very small, 1/2 the size of the sirloin steak and don't add them until steak is 85% done, usually 60 min. on 350, then another 30 min. I have never used stock either for that matter, just water and a little red wine.. It makes it's own gravy.

    Hello Mr. Paul, I have a question about the kidney portion of this pie. Many years ago I attempted to make a steak and kidney pie, but the smell of the kidneys was so strong, I had to abandon my dish. Since then I've tried to learn what I can do to prep the kidneys. Is there something that I may have missed? If I remember correctly, I cleaned the kidneys of anything other than the kidneys themselves. Thank you so much for your advice in this area.

      This can sometimes happen depending how the animal has been reared, the worst are Pig Kidneys. In the bakery we always washed them well in cold water the left them to soak in cold milk for several hours before use. I hope this helps.

      I've always used half the amount of kidney to beef, as kidney is very strong.
      I always cut the kidney into much smaller pieces so you just get a hint of kidney rather than a huge mouthful, which can be very off putting.

      Our local butcher only ever seems to sell pigs’ kidneys, and I find that a little goes a long way.

      Yes, everytime I roast beef I save the fat from the roasting tin and freeze it until I need to use, But you can use any other fat or oil but it won't have the same flavour of course.       Here in the UK, proper butchers - a sadly diminishing breed - used to make and sell their own dripping, which is great for frying chips, for fish and chips, in. I have fond memories of going to our local butcher's shop, as a kid, to get a pack of dripping for Sunday's roast. Sadly, that shop closed down last year.

      @@brianartillery Sorry Brian, only just seen this, been laid up with a very bad bought of alergical asthma brought on by the Olive Pollen here in Spain (Worst for 25 years) Yes Butchers were stopped from rendering their own dripping when EU regulations came in the late 70's.     I have only ever used kidney as dog food and in that case the house stank of urine as I boiled it. The second boil the urine had went away. I am afraid to cook with kidney because of the urine. What are your thoughts on this concern?
