    I think it is important for every country to embrace their food culture. To celebrate it. To not feel as if they are in competition with any place else.     John, you are a star! I love your down-to-earth attitude toward cookery: you know what good food is but you don't bother with showy presentations or fashionable ingredients. Plus, there is something reassuring in your low-key friendly delivery, and your careful but not patronising descriptions of the cooking process. From your videos, I'm relishing the chance to learn about the traditional, often under-appreciated, dishes of our country. It gives me more confidence in the kitchen and broadens my range of delicious dishes, yes; but, at the same time, gives a welcome hint of a more bucolic and patriotic past.
    More than ever, we need proper, good ol' Englishmen, like you, to remind us of what there is to enjoy and be proud about in our national culture. I, for one, love the simple moreish pleasure that can be had from classics like roast beef and Yorkshire pudding, chicken and mushroom pie, apple pie, sticky toffee pudding and Victoria sponge. And now, thanks to you, feel confident enough to try my hand at making them. In fact, I fully intend to sample the aforementioned fine specimens in training for the main event this Christmas. Call them the heats if you will!
    Anyway, I just wanted to share my appreciation for the work you do - I'm sure many others following and watching your channel feel the same way.

    Years ago when ships were wood, men were iron… I used to get steak and kid pie from a little fish and chips shop in Slough Bucks. It was awesome. I’ve thought of it many times since.

    I lived in England for a few years, and Oh Boy do I miss almost everything you make.
    I have tried a lot of your recipes with great success, and sometimes I listen to you just because your voice is so darn soothing :)
    Just wanted to thank you for having this channel and every time I am thinking to myself: "I wonder if I can find a recipe for X..?" There is you with you easy, no-fuss methods for everything I thought was difficult.
    If you find the time, would love to get your take on a beer batter for fish & chips, and a complete artery-clogging English breakfast. :)

    Hi John, I to, am a cook from the north of England, I just love your presentations of “So good dishes” bought you book today for my sister in law, (55) who does not have the confidence to make an egg and bacon flan, without burning something. I will wait with eager anticipation for her to serve a “quiche” your style.     Easy recipie, I made the filling yesterday with chuck steak and added in the Guiness, some for the pie, some for the cook. Absolutely wonderfull, the smell in the kitchen was amazing.
    Today is PIE day and after dreaming about pies all night, might just do mashed potato toppers on a couple to take to work

    You are the second "John" I have found whilst looking for good food recipes, the other one is a chap I know of as "chef John". I only need one more for the set.. Thank you Mr Kirkwood for taking the time to film and share your wealth of experience on RUclips. I have tried and loved your spud, cheese and onion pie. My good lady loved it, and I loved it. Unfortunately my son has cheese allergy so I made 2 pies, (I split the recipe in to 2 halves and use equal amounts of minced beef instead of cheese ), it did not work as well as the cheese, but hay ho that's experimenting for you. I am now looking at your snake and pigmy pie recipe. MMMMmmmmm. looks good and will be nipping down to shop later. Also bought some goodies from your shop today, including the cook book. Once again many thanks for sharing.

    Some people in the Northeastern United States still cook such things. My father was from New Hampshire and I remember his S&K pie with great fondness. He also cooked things like Yorkshire pudding, to go with a pot roast, and baked beans with brown bread, the latter done in a tin can double-boiler. There is a kind of honesty you experience when eating such simple foods. You feel you've done yourself a justice. It's a sensation I now find sorely lacking in our modern, pre-packaged, convenience society.

    Hi John....I made a Beef and Mushroom pie a couple of days ago using your Pastry recipe. Best pastry ever! Short, light and beautifully Buttery. I couldn't believe how good it was. You was right....no leakage through the fork holes in the base. I'm well impressed! Thanks for your great videos!

    I always love how you always start by being grateful to your supporters. You’re also so calmly flexible which means we learn EVEN MORE everytime we watch. The hard fat around the kidneys can be turned into suet, I’m curious, why discard it?

      John Kirkwood No worries, I’ve subscribed and turned the bell on a long time ago 😂 Here in Hawaii we have a long history of English, Scottish, and Irish dishes but they still have the older methods of the Victorian era so it’s nice coming here.     Another great video John! Also, I've had an idea for a video. You can do a video about cooking skills. I.e. how to sharpen a knife, removing skin from the onion And to slice it in different ways And so on! ☺

    Steak and Kidney pie is my all time favorite next to Cornish pasty and fish'n chips. Spent half a year in the UK as exchange student during the early 70th and the english mom cooked some really horrible food. But the Steak and Kidney pies she bought were always delicious. Anyway spent tons of my pocket money on the other two favorites just to survive :-).

    Excellent instructions for making a really good pastry for the Steak Pie. And the filling is fantastic, but I took the liberty of adding a few chopped up Carrots and some finely sliced Mushrooms. I also used Ox Kidney to be really traditional and I used Shin Beef as the meat. The result was a delicious pie with a wonderfully crumbly pastry that re-heated very well indeed.

    Thank you for mentioning alternatives for folks who cant use pork products. For religious reasons, I dont use pork or shellfish, and while I personally have a number of substitutes I have grown comfortable using, a lot of people do not.

    I had steak and kidney pie my first time while visiting Cambridge. It was delicious! I visited England two more times and I always went back to the same establishment for another pie. It's sad that we can't get the same kind of cooking here in the US.

    This is the king of pies in my opinion, next to steak and mushroom, and steak / quality mince pie. When I was a kid in primary school, I pretty much grew up eating mince beef pies, which were good quality back then, without all the fillers (soy etc.) we see used today.

    Hi John, we are in lockdown in Sydney so I have been baking to occupy myself. This steak and kidney pie is the best! Made it twice and the second time is even better!
    The only thing I did differently was to add a good ½ teaspoon of white pepper...really adds to it. As they say...black pepper for show, white for go 🤗.
    Not as many people like S&K now and it's hard to find.
    I also made your peanut/chocolate biscuits. Made one batch and then a double batch as I liked them so much?

    Oh this is getting bookmarked. I love me a steak and kidney pie, as my mother [I guess it would be 'mum' for the kind of person who would be more used to them!] used to take our little family to this Pub-styled restaurant when I was a boy, and that was something I tried and liked back then and still get nostalgic for today. They're not terribly easy to find in the US, so I suppose just making my own'll have to bridge that availability gap!

    I don’t know how your videos got on my feed but I’m glad they did. I had steak pie when I visited Gibraltar back in the 90’s. I’ve never found a recipe that looks like it was close. The one I had had peas and carrots in it and was very dense.

    hi john, do you have a recipe for bread pudding the browny cake type, not the custardy milky version.
    tried making twice now and both times it dried out edges and was still not cooked in middle, great vid as always.

      I've got a good one from my daughter[1], takes some of the sugar out and replaces with eating apple. Cook longer and not so hot, did one a couple weeks ago in a big pyrex dish around 2 hours at 150 degrees, it looked a little wobbly in the middles still when I took it out but of course it continues to cook for a while after removal from the oven.
      I've found for some reason it tastes better after I've frozen it and then defrosted.

    my Mom taught me years ago that a bit of white vinegar will tenderize chewy meats in stews and braisings. you never taste it nless you go wild with the vinegar. it really works well.

      This was so nice. It took me back to when my Mam did it for us when we were kids. She always used half lard half butter. I reckon it made the pastry easier to handle too. The filling was so lush that everyone said we’d add it to our repertoire. Thanks again.❤

    Ok this one was not for me, but I love the pastry recipe! It is fantastic and I have used it on several quiches.

    I'm a radiographer. I've done many IVPs so I know what kidneys do.
    Can't bring myself to eat one!

    My Experience and My Mistakes. OK, firstly, I used ready-rolled, shortcrust pastry for the base and ready-rolled, puff pastry for the top. So I did a couple of things different. One thing I'll say is this: The filling and the gravy were gorgeous and I must thank John Kirkwood for that. I've looked at other recipes for steak and kidney pie and they insist on browning the meat 3 pieces at a time...flouring them etc. and at first I was sceptical looking at this method. Also, when I saw the size of the pan he uses on this clip (I think I've got the same 'Judge' one) I thought, "Will I really fit all the meat, stock, onion etc. in there?" Well yes, I did. It worked out beautifully.
    I left the shop-bought pastry out of the fridge for longer than recommended. It went soggy. Also - and this is where I messed up a bit: I forgot to let the filling cool before I added it to the pie. That's an important step, as I found out. Coupled with the fact that I'd let the shortcrust base pastry become vaguely soupy anyway, by letting it sit unrefridgerated for too long...
    I will try and make my own pastry next time, or I'll be sharper when I use the shop-bought stuff. I tried making my own pastry a few times, many years ago, and I just couldn't get it down. But I'll try again because I was so very pleased with the filling and the gravy. Thank you John!

    Fantastic John, I like to use Ox kidney but had a bit of trouble getting hold of some the last time I made a steak & kidney pudding, got some eventually at a farm shop about 5 miles away. Just to let you know mate, I won't be home for tea as I'm going to WEM-BER-LEE... Ha'way the lads.....

    Looks great, although I have yet to taste anything that comes close to the King of Steak and Kidney pies, Pukka, ubiquitous in fish and chips shops up and down the UK.
