    Omg I feel like Winnie the Pooh just taught me how to make a wonderful pie! I make very good pastry (okay I make the best that anyone ever had according to my friends family and coworkers 😃) but this is a method that boggles my mind! I am definitely going to make these the next time I have company come for a wknd. Perfect meal on a chilly autumn night in Canada!

      As an Australian, I'm staggered that there are people who didn't know about steak pies and how amazing they are. We live off meat pies over here and steak pies are considered one of the best kinds you can get. If you want to really liven up the filling, you can toss in a tiny little bit of Guinness (or even a trace of Vegemite).

    Hi John, I just came on here to tell you that I made your steak pies for dinner for my family and they were overwhelmingly delighted. They've asked me to repeat it again soon! I love the hot water crust. The flavor of the crust was so savory and went well with the saucy interior. No leakage at all.
    Also just to throw in a helpful comment: the ratio and your recipe works perfectly for a 12 cup cupcake pan as well, for the American crowd. (I actually squeezed 13). Thanks again for sharing it.

I know I'm late to the party in terms of discovering your channel, but you've shared your knowledge in an approachable unpretentious manner that left me with a big smile after watching.     I can almost smell and taste them….YUMMY! My father was an Executive Chef (May he rest in peace🙏) and he made thee best minced meat pies during the Christmas holiday season, served with gravy, fries and a veggie. Your video brought back so many memories for me. My father is gone 10 years this August. His cooking/baking was sooooo good! 🇨🇦❤️

    Not an exaggeration to say this is Brilliantly skillful, very clearly presented and full of new tips that will prove mighty useful. I've made Pork pie with hot water crust pastry many times so this will be a doddle. It was cruelty to show it cut open on the plate! I wanted to grab it through the screen of my laptop!.     I made this filling and gravy recipe for pies for our dinner last night. I used store bought crust and made them in my Wolfgang Puck pie maker. Next time I will make the crust in the recipe. I wanted to make 4 but there wasn't enough filling so I boiled some cubed potatoes and added them to the meat mixture while it was cooling and it was perfect. They were so delicious and thank you for showing us the gravy mix. I am so glad I found it on Amazon and will keep in on hand now. Again, thank you for your video!

I followed the recipe (with everything I could find in the house, so I ended up making mini chicken pies, using a cup cake tin - which was the only metal thing I could find.     I’ve been watching several cooking channels for some time now, mostly American, but I’ve not been as inspired to try practically every recipe I see as I have yours. Not to mention adding to or changing out some of my kitchen supplies. I tried to adapt some of your measurements to American standard, but I tested one of my measuring cups like you did and got similar results, so, grams it is. At 65, I’ve become the chief cook and bottle washer of the household and your recipes have brought a refreshing change of pace around here. God bless, John.

    Cool the pan in a sink of cool water - this is a "double cooler" - it's just like a double boiler, but removes heat instead of adding it. Great innovation!

      Please let us know what you thought of the hot water crust. I'm afraid it would be tough, even rolling it out gently. The cold butter/lard version always makes for a tender, flakey crust. Thanks

    Here everything is absolutely wonderful!       Aye, a great recipe guide it is! I changed mine up slightly by using a dark roux of flour browned in butter until it's the color of dark caramel. Adds such a rich flavor to an already amazing pie.

    making a huge batch of these today, I love how its just beef and oxo, no veg, wine, beer or even onions, who woulda guessed. the result is just intensely beefy filling, ive been experimenting with low and slow oven beef chuck bcos im trying maximise the tenderness, skipping the searing this time too

    How delightful! As a an American I may lack some of the culinary and cultural touchstones that would come from a dish like this but living in South Florida they remind me of Empanadas and Jamaican Beef patties, many of which contain very simply seasoned meat such as this, with a small amount of character defining spices. To say nothing of the succinct, calming, easy to follow presentation. Absolutely delightful and well done! I hope to try this recipe some day.

      You can't beat a good ashet pie (that's what we call individual steak pies in Glasgow), I find most of the frozen varieties to have very stringy fatty meat inside whereas a good one should have very little fat and the meat should be falling apart it's so tender

    When I was a kid we made pudgie pies, you bought a maker it was meant for camping but you could make them at home if you got a gas stove. This iron was cupped on both halves about 3- 3 1/2 inches with long handles hence a campfire. You buttered both halves put a slice of bread on each half then fill one with whatever you want, your beef recipe, ham & cheese, pie filling& marshmallows, PB&J whatever you want. So then fold the halves of the iron together pinch off the bread crust that's hanging out, stick it in the fire and bake. The camping easy way, I'm sure it would do fine with your pastry dough just might take longer.

    Sincere thanks for giving quantities in both systems of measurement. Mixing the flour with hot water is new to me. I'm going to try it. I make similar pies and add peas, carrots, onions and potatoes cubed small to the meat filling.

    Thank you so much for this video, it brought back some precious memories. My mother wasn't a professional cook but she made really good pies (including steak pies but other recipes also) and she used a lot of the steps shown here including some which I'd forgotten. We have some Yorkshire relatives on my mother's side of the family (Northern Irish on the other) so possibly there's a link to the methods somewhere, which got passed on. As children we used to steal the cuttings from when she cut out the pie parts from the rolled out pastry and eat them. They tasted good to us ! I cloned some of my mother's other recipes (a particular favourite was salmon fishcakes which I now cook for my kids) but never came up with a good version of her delicious steak pies. I think I shall try this one now. There's nothing quite like good basic cooking like this.

      @@JohnKirkwoodProFoodHomemade Thank you very much indeed for the personal response. I'll definitely have a good look at your new Ham and Leek feature. I'm curious about how you do your salmon fishcakes. Mine are essentially a base of (freshly) mashed potato mixed with partly fried onions, milk and a generous helping of grated cheddar cheese which helps them brown nicely. For the salmon mix I use three types - tinned, smoked and baked all mixed together with egg and parsley. The whole thing is then mixed and then they're made into patties, coated with flour and fried and browned in melted butter. Using this recipe I got the one and only complement I've ever got from my teenage daughter (she likes my cooking but never says anything): "they're good, they are !" Thank you again

    i made a similar pie for my mum when she was in hospital with a pork mince and beef mince with potatoes i used the fats from the fry off mince to reuse in the gravy filling soy sauce and tomato puree to make the umami flavors pop

    Hi John - been a subscriber for a long time but this week for the first time I made one of your recipes - these steak pies. Whilst I've intended to do it many times in the past I never got round to it. However the local farm shop has just doubled the price of its steak pies and I think they have changed the recipie because they don't taste as nice as they used to so decided to make yours. I was not disappointed John - they are great and its not just me saying that! I used unsalted butter (I'm sure you will have mentioned whether to use salted or not but I never took it in) and froze the small ball of spare pastry I had left over at the end. I presume that you thaw this the day before you want to reuse. I have a food processor so I think next time I will go for something with a conventional shortcrust pastry. Thanks for sharing your knowledge by posting these videos.
