He's right because I love cheese omelettes where the cheese runs out and gets crispy, I love my over easy eggs with a crispy bottom, that's how my mom made em for me and I'm a chef for 20 years
Ive seen him cook scrambled eggs in a different show and he did slightly differently. I must say that salting the eggs when they are starting to thicken is really good tip. And if you want fluffy eggs, just whisk them before you put them in a hot pan, where is a bubbling butter already. Then its a really quick process, but the eggs are truly fluffy.
I always remember watching this and the change from heat to no heat, is something I’ve used since & it’s works great! I think the crème fresh made them more creamy & the eggs they use are probably way better than I get at my store so I’m sure it’s okay to eat them not fully cooked. Ive seen him cook scrambled eggs in a different show and he did slightly differently. I must say that salting the eggs when they are starting to thicken is really good tip. And if you want fluffy eggs, just whisk them before you put them in a hot pan, where is a bubbling butter already. Then its a really quick process, but the eggs are truly fluffy.

I always remember watching this and the change from heat to no heat, is something I’ve used since & it’s works great! I think the crème fresh made them more creamy & the eggs they use are probably way better than I get at my store so I’m sure it’s okay to eat them not fully cooked. It’s just the type of scrambled eggs he made that’s something majority of ppl aren’t used to eating.
