It's a half cup of butter or 1 stick of butter in case anyone else was wondering like I was. Just tried to make it this morning and all was well until I left the sauce to stay warm on top of the warm water pot too long and it turned into scrambled eggs. I don't recommend leaving it to stay warm on top of the pot. Other than that it was delicious! Sauce had great flavor and was the right consistency(before my slip up). Will have to try again soon !
I brought my water up to "a running boil" and got scrambled eggs on my Hollandaise. Probably the most important thing you need to know that Chef Ramsey DOES NOT teach here is that there should be just enough heat (not too much, but not too little) for the eggs & butter to meld properly.. this may take some trial and error for you to find out how much heat is right for your specific stove & cooking utensils.

Recipe looks to be this. Makes 4 eggs Benny 1/2 cup of butter 3x egg yokes 4x whole eggs 4x slices of ham 3x Tbsp of white vinegar (for poached eggs water) 1x Tbsp of white vinegar (for Hollandaise sauce) 1x Tbsp of lemon juice 3x Tbsp of olive oil (for cooking ham and toasting English muffin) 2x English muffins Directions Hollandaise sauce 1: have a large pot filled 3/4 full with water bring to a rolling boil 2: have a glass/metal bowl with 3 egg yokes inside with 1 Tbsp of white vinegar, place in pot with boiling water - be careful to mix constantly with wisk till creamy remove from heat as needed to not fully cook egg yokes 3: melt 1/2 cup of butter (not margine) over medium heat till fully melted 4: slowly add butter to mixed egg yokes (adding too quickly can mess it up) till fully mixed then add 1 Tbsp of Lemon juice and add salt/pepper to taste. Set aside once mixed do not place over boiling water unless cooled enough may cause eggs to cook when not watching reheat once ready if needed. (Can thin sauce with water if becomes too cooked/dry but add very small amounts or becomes too watery) Build eggs Benny 1: bring pot to boiling with 3 Tbsp of white vinegar 2: vigorously stir boiling water then crack eggs individually into a cup then add to pot (you can also just Crack and drop them in but be careful they don't stick to bottom) 3: lower heat to medium and let eggs cook for 3 to 4 minutes (longer cook less runny the yoke) 4: remove eggs from pot and let sit on cloth (leave eggs on straining spons so it doesn't stick to cloth or paper towel) 5: heat skillet to medium high heat with 3 Tbsp of olive oil 6: cook ham on skillet to desired crispness 7: place English muffins in skillet and toast to desired level 8: assemble eggs benny

Legendary Weapon Don't like that either. Light and more healthy is better. I usually go for an egg or two and whisk with it some egg whites for an omelette or scrambled. Toast and tomatoes cucumbers or a little bit of fruit like bananas or cherries (my personal favs/tastes) with avocado. Tends to take a few years out of the hospital bed later in life :).
It took me a couple times to perfect this! I succeeded! A couple years later, I made this for the first meal, that I alone prepared for my boyfriend, and now husband! He is a chef, and went to culinary school! He was impressed! I hadn’t made it in awhile as we were moving! I was nervous to do it today, but made it the best out of all the times! I think people are too literal with his ingredient amounts. He might say a tablespoon of this, a teaspoon of that, but that's just a control amount for the people who can't cook. When you do cook, you get a feel for how much you need and some things you can go a little heavier on. Like curry, for example. A recipe might call for 4 tablespoons, but you can use 5 or 6 or even 3. It's personal taste. Some things you can't overdo it. Like vinegar. It's going to be less forgiving if you use too much or not enough.
He definitely should. Problem might be that he‘s way too kind. There are a lot of wannabe chefs/restaurateurs out there who are huge assholes. He wouldn‘t stand a chance with his good manners

Oh my goodness, that was the best eggs benedict I've ever made. The methods were so quick and easy, I'm gonna have to show my mom so she doesn't have to struggle so much! The half cup of butter and a little bit of water for bringing back the sauce from getting too thick comments were spot on
I wouldn't mind being the dishwasher since that's my favourite household chore and it ain't that bad with the certainty of eating delicious meals everyday.

I have tried this one 3 times so far but haven't quite gotten it perfect yet. They are always delicious but there are a lot of elements to come together in a short time. This is on my list of dishes I really want to be able to crank out for guests on the weekend. I can't wait until I can actually pull this off well.

I cook for a living, so yeah I might end up making this. I'm not a poached egg fan though, but tomorrow before work were making a full breakfast. I like how he didn't start the video by telling us to "don't forget to leave a like and hit that bell to subscribe and join the notification squad" (Edit) like everyone already doesn't know he's a famous multimillionaire and doesn't need to ask ffs no need to point the out the obvious.
I make the sauce last. That way, nothing else needs to be hot when served. The sauce will warm everything up. And I don’t have to worry about keeping it warm as I prepare everything else, so I don’t keep it over the steam and risk scrambled or broken hollandaise. Furthermore, it also gives me the option to add a bit of the bacon fat or parma ham fat into my butter for the hollandaise. It unifies the flavors very nicely and tastes marvelous.

I made this. I just have one thing to tell you. IT'S PERFECT. If you want a tip, just make sure you don't give up on the Hollindaise or the poached eggs. I broke the Hollandaise the first time I made it, and I actually found that if you slowly add 1-3 teaspoons of boiling water while constantly whisking, it will come back together. Just don't give up!

For those rookie cooks like me, I'd suggest changing the order to prevent the hollandaise cream from getting cold and separating. 1 bacon 2 eggs 3 bread 4 hollandaise cream I love your Gordon.

Someone suggested to add 2+ tbsp of the boiling water to bring it to life again but never tried that.

I think people are too literal with his ingredient amounts. He might say a tablespoon of this, a teaspoon of that, but that's just a control amount for the people who can't cook. When you do cook, you get a feel for how much you need and some things you can go a little heavier on. Like curry, for example. A recipe might call for 4 tablespoons, but you can use 5 or 6 or even 3. It's personal taste. Some things you can't overdo it. Like vinegar. It's going to be less forgiving if you use too much or not enough.

I make the sauce last. That way, nothing else needs to be hot when served. The sauce will warm everything up. And I don’t have to worry about keeping it warm as I prepare everything else, so I don’t keep it over the steam and risk scrambled or broken hollandaise. Furthermore, it also gives me the option to add a bit of the bacon fat or parma ham fat into my butter for the hollandaise. It unifies the flavors very nicely and tastes marvelous.

I made this. I just have one thing to tell you. IT'S PERFECT.
If you want a tip, just make sure you don't give up on the Hollindaise or the poached eggs. I broke the Hollandaise the first time I made it, and I actually found that if you slowly add 1-3 teaspoons of boiling water while constantly whisking, it will come back together. Just don't give up!
