    I just love your channel! I’m new to canning and preservation and I have learned SO MUCH from you. I just want you to know how much I appreciate your experience and willingness to share it with us all.     I'm sorry if I'm repeating what someone what someone else has said. There seems to be more and more incidents with Ball and Kerr jars blowing out and buckling and just plain failing. Many of us canning folk are going to a company named Forjars for our lids. Please look into them if you haven't already. Love you both and appreciate the loving noodles out of you🥰

      ForJars lids are amazing!! 100% totally recommend them. Even if RoseRed doesn't want to join the affiliate program, I'd still suggest trying the lids, they're awesome!

      I have been canning every chance I get for 2 months and I had one Ball lid slightly buckle. The seal is good...for now, but will be checking that jar often. I have 500 ForJars lids that I will use when all my Ball lids are gone.

      Thanks for another great video Pam and Jim! You two inspire me. I have just purchased some ForJars lids to try them. They are recommended by many people I respect as experienced canners…so I’m going to give them a try. I have had some fails lately with Ball lids…and I’ve been canning for many years.     I have the Ball Blue Book!! Love their recipes! I've made salsa, lots of jellies and jams, and the best mincemeat pie filling ever using Kieffer pears...I love canning! And I love this channel! I have told all my family and friends to tune in and learn about food preservation.

    I have problems with the lids and rings of Ball and Kerr's,now I use Forjas Lids and Rings,and I don't have no problems canning my food.Seal pretty good the jars.

    Something I’m always surprised by is how when watching you put together a recipe I’ve seen in the Ball book a hundred times, suddenly it becomes relatable because I’m seeing it come together with ingredients as well hearing you talk about it. I’ve made chicken soup many times using these ingredients but never with a recipe. When I can it, and I absolutely will now, I’ll be sure to follow the recipe. I don’t have any dried lemons yet but do you think adding a slice of a fresh lemon will work without having too strong of a lemon flavor?

      You can add quite a lot of lemon juice in chicken soup and a slice of fresh lemon is not a problem. Anything that adds to the acidity and lowers the PH makes your preserves safer

    I have limited storage space - small NYC apartment - so I reduce my stocks by half before I can them. So, I have pint bottles of stock that are double strength. I either use my slow cooker on low without the top, which can take ages but does not need as much baby sitting, or I use a wide saucepan on the stove. Anyway, my work around for lack of storage space.

    I love your videos and all your research. I feel safe following your instructions. This chicken soup is my go-to recipe for chicken soup. We like it as is with saltines, or I add leftover rice or pasta to it. I can it in 1 1/2 pt. jars for the two of us. Thank you for all you do.

    Love this! I am one of those who asked..lol And I canned some chicken soup using lemon that I had dehydrated. Now...my finished product was not as pretty as yours. My lemons disappeared in the jars. The taste however, is just wonderful!!! Making more tomorrow..

    Just made some chicken soup ... but not for canning. I add dried dill and a bit of Aleppo pepper in addition to the lemon. Aleppo pepper is not real easy to find, but if you like pepper and feel red pepper flakes are too hot to your liking, you will love Aleppo! P.S. I now have all my canning supplies ... I just need a new stove top! LOL .... First, I will try to see if a free range electric eye works so I can work on the back porch. Thanks for sharing.

      I just canned for the first time in my Nesco! Perfection. I had the IP Max which is actually easier but I wanted the ability to do quarts so I asked for it as my Christmas gift 😉. I was a little nervous but man, oh man, it’s easy. 😀

      when I get it off my shelf I go ahead and add either rice to it and or noodles and maybe a little bit more liquid. it is wonderful but I would like to know whether I could add a fresh slice of lemon in it. What do u think?

    This looks so lovely and you make it seem so easy. I will eventually break down and purchase a pressure canner, but working full time and trying to prep all the stuff we want to do makes it tough. As we look forward to retiring (eventually) learning how to can now will make things a bit easier down the road. Thank you for all you do!

      My hubby & myself were enjoying our retirement then got a call from Calif Child Protective Services if we would raise our 5 week old granddaughter, now daughter. My husbands question: what do we do now? Go get diapers, formula & butt wipes I suppose. She’s now 5. Enjoying our 2nd family.

      Technically I can't "recommend" any because I am not a certified test kitchen, but I can tell you that I have scientifically tested 3: the Instant Pot Max, the Nesco/Carey, and the Presto Digital at my elevation of 5000 feet and at that elevation, all 3 got the test foods into the kill zone the the amount of time to render the food safe. I ultimately gave away the Presto to someone who would use it more than I would. I love the Nesco for its ease of use and the Max because it shows the internat temperature on the front screen and I can then know for sure about the safety of the food. The Max holds only 4 pints, but I use both those canners a lot.

    I just love my Cary/Nesco canner, and use it all the time. I used it as a pressure cooker, too because it could accommodate my turkey carcass when I made turkey stock. I’ve never regretted buying this canner. It fits six pints if you use regular mouth jars for pressure canning, but they are too tall to use for water bathing.

    I just saw this in 1 if my chat groups and though see if you'd do a video on different breakfast/snacks. Someone dehydrated leftover waffles (cut-up into it's small squares), french toast..also maybe granola/clusters, stored with dried fruit. 🤔 just a thought I wanted to share. I luv this channel❣️

    Thank you for the most wonderful video! I haven't dehydrated lemon slices before. Could you use a fresh slice? I have several chickens in the freezer. I wish they were thawed out!     That looks like a really good recipe. Thanks for doing a demo of it. I noticed that you used regular mouth jars. I’ve heard some people have trouble in the Carey or Nesco because the regular mouth quart jars are taller than the wide mouth quart jars. The problem being that the taller quarts can obstruct the vent pip. One way I get around that is I put the stacking shelf at the bottom of the canner instead of the wire shelf. That gives me a little height grace. Then when I go to close the lid, I make sure the vent pipe is directly above a jar. When I close the lid, and turn it, the vent pipe situates between the jars freeing the venting process. This might help someone who has had a problem while using regular mouth quart jars.

      I have never had that problem and with the way it is engineered, with the little cage around the pip, it could not happen because steam can always escape through the side slits even if the bottom holes are obstructed. But it sounds that you have a concern and have solved the problem--so that is great!

    One time, on suttons daze, she had a jar of, I think broth, came out of the canner, spewing everywhere. That was scary. I am sure it was for you, too. So far I haven't had anything like that happen and hope I never expience it.

    My Nesco book recommends wide mouth jars so thanks for showing regular mouth quart jars. I got it for Christmas and just canned broth today to learn how to use it. Perfect! I already had the IP Max based on your testing which I adore but I wanted the ability to do quarts. Looks good, I’ll add this to my list of things to try. 🙏

      Don't put starches like rice or pasta in your preserves. Cook separately and add to your preserves when you're ready to eat them

    I just found your channel and what a blessing!! I have received a IP max from my daughter but didn’t get the owners Manuel or recipe books and want to do some canning of raw pack tomatoes . I have used it already in some cooking of chicken, roasts & vegetables but your canning videos sparked an interest as I am a canner from way back and have used all the old methods but now with this IP I can do smaller amounts (just me) and have all that goodness from fresh vegetables!
    Just not sure on the pressure, time , vent settings and how much water to add for tomatoes -I need help!!
    I will can the chicken like you demonstrated - that looked delicious!!

    Nesco, I have a glass top stove, kind of scared to pressure can on it, it might be a option. All though I know it won't make as many jars.

    Unrelated but I have a question regarding ground turkey or chicken. I can't eat red meat, so I substitute ground chicken or turkey in my recipes that call for ground beef. I see that the USDA has instruction on how to can ground meat but didn't know if changing out beef for chicken or turkey would affect recipes that call for ground beef. Thanks for all you and Jim do. Sharing your wisdom is a gift that we appreciate very much.

      They do not have recipes for ground poultry at all. And nothing for turkey. But I bet you could substitute shredded chicken or small chicken dices if that would work.

    You said you cooked 3 whole chickens in the canner with 13 cups or quarts ? of water.
    Could you do it again and film it this time so we can see how you made that delicious looking chicken broth you used in this chicken soup recipe video. Please let us see the cooker you used and how to do it in the big canner?
    I hope you can make the video and show it to us.
    That broth looked so flavorful and rich.
    I would love to make that some broth like that batch you made.

      The canner is the 23 QT Presto canner. It will be a while before we do that again. Jim
