    Can you tell me why we can’t can pasta in our soup but you can buy soup at the store that has pasta in it? What do they do different that makes it okay?

    Hi Pam, I just wanted to tell you how much you have influenced and motivated me to get back to all this type of preserving and bread making. I just recently found your channel and am thoroughly enjoying all your videos. I’m 71 (widowed last year after being married 50 years) and it’s never to late to take up this way of living. Even though it’s just me now, I really enjoy doing all these types of thing! Thanks for all you and Jim do, you two do make a difference! Oh, BTW the pasta in the minestrone is called ditalini or tubettini.

      Ditalini pasta is awesome in soups. I have trouble finding it since I moved to small town in East Texas. Maybe I should look for it as “Salad Pasta”. Looks delis, Pam!

    Hi Pam and Jim. I made this minestrone and we had it for dinner last night as I was too tired after work to cook. I added 1/2 cup dry pasta per person and 1 quart jar gave 3 serves. It was absolutely delicious so this is one recipe I'll be making over and over. Many thanks.

    Congratulations on your retirement! I make minestrone soup with Italian sausage (my husband prefers it) and then freeze it. My plan now is to follow your recipe (omitting red pepper flakes) and adding cooked sausage with the spinach and pasta!

    I don't take any chances or can unproven recipes but I wish they would tell how companies can rice and noodles so we could figure out how to do it ourselves. Have great future trips.

      That will probably never happen given what happens to those foods when canned. They swell and interfere with heat transfer so the proper temperature may not be reached.

    OMG, I didn’t can this soup, but it sounded so goo that I made a half batch tonight for dinner.
    I used our own home grown and canned crushed tomatoes (which I learned from your canning course) and our homegrown butternut squash and other fresh veggies. It was soooo good! Thank you! I certainly am planning on making this again and canning it up. Amazing.

    Please test canning fully cooked poultry for safety. USDA does not approve because it hasn't been tested and they feel it might be too dense and yet at the same time say the protein is broken down (which means it gets less dense). They do not acknowledge the conductivity of packing in broth or water either. With holiday leftovers and holiday deals on turkey it would be great to let everyone know if it's safe to can cooked poultry. Thanks for all you do!

    The one things that has confused me since starting this canning journey is the USDA recommends canning quarts of beans at 90 minutes and I have learned you can any recipe to the ingredient with the highest required time when cooked alone. But why then can we do “soups” even though they have beans for 75 instead of 90. I continue to do soup with beans to 90 because I figure if unsure it’s better to go a bit longer but I’m curious on this fact.

    I accidentally canned a bay leaf in beef stew and it made the stew taste awful! I thought I had taken all the leaves out. I didn't count them bad mistake. This looks so good!!

    Save on canning jars, cook it down thicker, then when needed, simply add H2O during heating it up.

      At 12:01, Pam explains that USDA stated that you fill the jars no more than full of solids. Earlier in the video, Pam stated the the soup cannot too viscous (otherwise, it will not reach or be in the kill zone long enough as mentioned in other videos). Jim

    Where did you buy your pan, I like it very much. I've never cared for minestrone soup but it wasn't homemade. I might make a small batch to see if we like the homemade and if we do I will can some.
    The necklace is beautiful and isn't it funny how we stumble on our hidden treasures long after we stopped looking for them.

    Do I detect a soup canning recipe book in the future? I just love soup in winter and fall and would love to know how to adapt some recipes for safe pressure canning. Your showing how to do soup in two steps gives me hope of doing so very safely.
    You look so beautifully dressed I wanted to put an apron on to keep you spiffy. But you didn't need it.

    I have a question. Why is it necessary to cook the soup and beans completely before canning? Does it not overcook them with the additional processing time then the extra time when pasta is later added? 👀 Am just wondering about the end product/texture of the veggies. (?)
