Thank you for leaving in the exploding jar! So many people would have edited that out. I'm a new canner, it was good for me to see that. I'm glad you're okay! We love chili, I'm happy to learn that it's okay to can.
It could be a few reasons for siphoning, one is not enough head space/de-bubbling the other could be the ring. Hope that helps. Need to check head space, always de-bubble and check rings are on properly around the rim (some maybe bent from over use). Don't tighten to much that also could siphon. If you see one has let it cool down at least 10 minutes before opening the jar and with caution.
Pam…. Seems like I’m not alone in accolades for you being so transparent in teaching us I thank you for not being afraid to show us the good bad and ugly I know I learned a very valuable lesson from this lesson I am so very thankful you were not injured Again thank You for the love and knowledge you give us in every single video❤
Dear loveliest woman! And Jim! Sweden here, bought a Presto and started canning thanks to you! Still a newbe and learning. Need to get it to work with Weck jars because ONE Ball mason har is about 9 dollars over here. ONE lid is 2,3 dollars.. Love from Sweden, today with -25 celsius. My first attempt on raw pack chicken is on the stove.
I am so glad you did not get burned. Thanks for leaving that part in so new canners will understand what to do and not do. That is so important. Also, I love all the great content you provide to those that are new to food storage and preparedness.
Do I dare tell you that you are my hero?? When it comes to preparedness and canning, your the one!!! Thank you for including your oopses along with your tested knowledge with us! I look forward to canning chili. I have some empty pint jars and my goal is to keep them all filled. After we eat what's in them I only want a handful empty and when there's enough to fill a canner (mainly my Nesco, electric pressure canner) I process another recipe. You really motivate me!! Thank you!
I jumped and gasped when the lid came flying off the jar! I'm so glad your hands were wet and you're okay! We should all learn from that mishap. Thank you for leaving it in the video
I've learned my lesson before by not sticking to the rules of cooking. As long as you didn't get burned...lesson learned. Take care Rose and thank you for sharing this video. It did remind us not to hurry the process even if we are hungry. LOL
Thank you for leaving in the jar opening. This is so honest about what can happen and enlightening for new canners like me. It feels like I’m back, standing on a chair, learning to cook beside grandma and mum. ❤
Scary. I did not know that could happen when you open a hot jar. Thank you for showing that. I'm so glad you didn't get burned. You handled it like a pro.
I have some awesome cans of chipolte chilies I used to can some chicken awhile back. It would be so good to put up some chipolte beef as well. Thank you for being such a good source of motivation.
That looks very yummy! That is a beautiful looking chili. I can't wait to try the recipe. I am very glad you didn't get burned from that exploding jar. Thank you for leaving that in, because even those of us with experience can get complacent.
That looks delicious Pam! I yelped when you opened that jar and scared my hubby who was taking a nap lol. Glad you didn’t get hurt and that you shared with us what could happen ❤.
That really startled me! My jars are usually still boiling when I take them out of the canner. Those contents are really hot. I am so glad that you didn’t get burned. Great recipe. I have that book, so I will have to make it.
I got a roast out of the freezer and I’m doing this tomorrow!! Thanks so much for these recipes! Agree the exploding jar was super interesting to see and now I know if it ever happened to me it’s okay! I will use a dishcloth if I ever do! Thanks!!
So glad you didn’t burn your hand when opening that jar…even your mishaps are so educational 💕. This looks delicious and I’m going to try canning this for sure because it will be perfect for the cooler weather we are having…and I LOVE Chile. Thank you
Glad you are ok after that explosion. Your face when that happened. And thank you for sharing what can happen. I am sure that surprised you, as well. I was following along in the Ball Canning Book as you were preparing this. Thank you Pam and Jim ❣
I hope this does not sound tacky or hurtful, but I am thankful that you showed the jar spewing out when the jar was opened. Now, I know that I am not the only one this has happened to. I will be canning chili this week. Thank you for sharing with us.
That was really scary! I've never even thought to open a jar right away. Thank you for leaving that part in and not faking it. I'm so glad you are ok. Looks super yummy
That little bit left in the pot is usually what I have. It makes a great dinner with no leftovers. Just add biscuits. I'm glad you didn't get burned. Chipotle chili will definitely make it to my list of canned foods. Thank you.
This looks so yummy, I would love to try adding to a tortilla with some shredded cheddar cheese and sour cream. I bought the book because everything you've made so far looks like I would like it too. Your reflexes are still good Pam, I thought for sure you would be burned. I've never opened a jar like you did and I probably will never after seeing what can happen. Thank you for sharing this yummy stew.
I hope that your new kitchen is coming along without a hitch. I had to laugh when the jar kinda exploded. I do stuff like that all the time. Growing a brain never stops!
This looks so delicious! There’s so much that you can and dehydrate that I’ve been doing with great success! Thanks to your awesome teaching skills. Question: This has nothing to do with this recipe but when will we be graced with your sister, Cindy’s, presence again? I simply adore you two together! Thanks, Jim, for your great filming, input and all the ‘behind the scenes’ work you do. I always enjoy when we are blest to hear and see you!
Funny you should ask! We are at their hope this weekend to make another video that will show on our other channel. If we have time we will try to make one for RoseRed as well.
Thanks Pam for this one, it looks absolutely delicious. This is so going on my pantry shelf. I just so happen to have 5 lbs. of sirloin beef tips that didn't get used for kabobs. Glad your okay from the boiling explosion.
100% agree about leaving the jar opening scene in. I had no idea jars would do that! Most likely just saved many of us from getting burned. Just passed your channel on to another friend who's a seasoned canner. Thanks for the great content!!!
I'm so new to canning that I have yet to make my purchase of the presto induction pressure canner. Been doing a lot of research and found your channel!! Love all your recipes and thank you for sharing all of your testing! This looks delish!!
If you have not seen their videos on canning for beginners, or testing several electric pressure canners with her “gadget “, you must. These offer authoritative and scientific data which gave me the information I needed to make my decision about beginning my journey into canning for, as Pam puts it, food safety, security and preservation “. ❤
You will enjoy your induction compatible Presto canner. We purchased one about 8 Mos ago and have canned up a storm. We have an induction cooktop as well as an induction hob and like being able to use the hob in another room when we don't want the big canner taking up space in the kitchen. Be sure to get a weighted pressure regulator so that you don't have to "watch" the pot/guage once it comes to pressure. You can tell by sound what it's up to. Good luck!
Glad you are ok opening that hot jar. I would have waited so the bubbling cooled down first. I would have got burned if I did that. Again glad your ok. Thank you for sharing that part.
WOW! This is a wake-up video, for sure! I have never attempted to open a freshly removed jar (10-15 minutes) from the pressure canner. As you immediately pointed out, you are fine, not hurt, and your other immediate point is to use a buffer/towel next time opening a hot jar. Very important safety lesson 💜💜💜💜 The recipe looks and sounds so yummy!! Thank you for sharing the whole enchilada 😉. Fantastic lessons 👏
Pam, I've been watching your channel for about a year now and have learned so much! I canned this recipe yesterday and it got me to thinking (scares my husband sometimes). We just bought a Harvest Right a couple of months ago and I can see this recipe being a welcome addition to our freeze dried meals. Thinking Trail Grazers, how would you prepare this recipe to freeze dry it for the trails? Instant Pot? I'm hoping you will give this one some thought and maybe show us how to freeze dry this. My husband had it for dinner last night and REALLY likes it!
Loved the quick canning video. Nobody needs to watch the tedious parts of filling, debubbling and cleaning tops of jars. So glad you were not hurt with opening the jar. I literally jumped because I thought you would be hurt. As another mentioned good for you for leaving it in. I would never know that could happen. Keep up with the short yet super informative videos!!
I about jumped out of my seat! Thanks for leaving that part in. So important to remember to be careful. I will try this recipe soon. Pam, do you know anything about sprouting pinto beans? Hi Pam, I'm making this tomorrow, it sounds Wonderful. Just wondering if I could cook the beans in the instant pot prior to adding to the mix and if so, How long would you cook them?
That looks so good! I was wondering why you were opening a hot jar (I was taught not to disturb the jars for 24 hours) and then you jumped, and I jumped! Glad the jar didn't break and that you are OK. Does the chili thicken as it cools or do you need to add a thickener before serving?
So glad you are Ok. Never saw that happen before. But being hot I see why it happen. Good lesson. Do you just brown the meat or cook it done. And you could add corn. Keep the videos coming!

I was just about to comment a thank you as well for leaving it in. It was really good to see. So glad you were not burned.
I thought the same thing. Thanks for posting with all of the imperfections! It helps us rookies.😊
You had me at “canning,” “beef,” “chipotle,” and “chili”!
HAHAHA
What a lesson we learned by you opening the jar. Thank for leaving it in.
Yes I've never done/seen that!!
Pam…. Seems like I’m not alone in accolades for you being so transparent in teaching us

Yes, thanks for your concern and safety suggestion. I bought a spray-on burn solution and it worked fine. Thanks for watching our video. Jim

@@RoseRedHomestead so glad to hear she's ok. Thx Jim!
Would I be able to omit the peppers and add more of either the onions or tomatoes?
Tfs! Please stay safe 💜
I love your recipes I wish we could get a written copy
I about jumped out of my seat! Thanks for leaving that part in. So important to remember to be careful. I will try this recipe soon. Pam, do you know anything about sprouting pinto beans? I want to do it. I heard great things about sprouting the pinto bean but not sure of the process. Thanks again!!!!!
Going to try this 🙂
Oh my gosh! I really hope that didn't burn you! It looks delicious!
Good thing you didn't get burnt!
Looks yummy
Just a little bit...I bought some burn spray for Pam. She is ok now. Jim
@@RoseRedHomestead Thats good, Thanks for all you guys do.
Thank you for the demo. So glad your hands are OK! I'm also thankful you left that bit in the video - a good learning lesson for me! Could lamb stew meat (cut to the same size as in the recipe) be substituted for part or all of the beef stew meat? I also was wondering if there are any updates on your pressure canning course? I'm looking forward to it. :)
Yummy 😋
That was a pretty scary moment with that jar evacuating like that. I always admire the fact that you show all the oops moments that can happen when we can.
Thank you. I think it is important to be real!
Thank you testing the recipe and adding your tweaks. Trust your judgement! 🤗
You are so welcome! Jim
Oh, that made me jump, with the exploding jar!! Glad you're O.k.
Hello from Luxembourg,
I will try this, without the explosion of course 😄.
Yes, do make it and let us know the the results. We agree, without the explosions. Stay Safe! Jim
Oh no, I was expecting them to explode when you took them out of the canner in 35⁰ wind. I would never ever open until they sealed and cooled down. I'm happy you're okay!! You'd have to know my luck.😉🤗

So glad you are Ok. Never saw that happen before. But being hot I see why it happen. Good lesson.
Do you just brown the meat or cook it done. And you could add corn.
Keep the videos coming!
Love your videos! Thank you so much. Glad you didn't get burned when that lid flew off. I've noticed a high-pitched background whine in your last few videos. Perhaps some electronic interference with your microphone?
