    I had a 2nd turkey I wanted to cook and eat without canning first. This was last night at 7pm. So I found a recipe that came with my pressure canner: 9 pounds of turkey, 6 cups of liquid, 15 pounds of pressure for 10 minutes, and seasonings. I didn't think it would work. Afterall, 10 minutes!? I gave it a try and approximately 1 hour later. I was eating perfect turkey. Wow! I will never put another turkey in the oven again; never. That was so easy and good. All thanks to my pressure canner. Thank you, Jim and Pam for all you do for us. Happy Thanksgiving.

    update: 24 quarts of tortilla soup canned and in the pantry. (except the one for dinner!) I asked around for turkey carcasses and got four besides my own. have enough broth left for some bone broth. Just freezing till another carcass or two can be asked for at Christmas. (in-laws think I may be nuts!) Thanks for such an easy recipe.

    Just canned your turkey soup recipe. Absolutely delicious! Used three medium chipotle peppers. A nice warmth without too much heat. Thank you for a wonderful new addition to the pantry.

    Whenever I have corn tortillas there always seems to be 2 or 3 left in the package that get dried out. I put them in the freezer to use in tortilla soup.

    Such a Blessing are the whole two of you. In the coming weeks please take time to decompress. Retirement is a strange phase of life, not having or "getting to" get up and go to work. I say "getting to" from Beverly Sills the GORGEOUS Opera singer. A question once ask of her was about "having to" sing and she corrected that question saying she gets to sing. Such a remarkable commitment and singer. Anyway, back to Pam. This channel is your re-career that you started because of your beautiful hearts and love for others. We know you enjoy the University and get satisfaction from planning and implementing. This channel is more perpetual classes wrapped in loving kindness. The planning and implementation is in every video. I went through a retirement phase from electronics & communications and re-careered into a whole new one. Reasons to get up in the morning, rason d'etre! Still awaken at 3-4 AM that's my internal clock LOLOLOLOL. Please take time for Pam, and of course Jim too! 🙏

    I made this recipe today but modified a few ingredients to our liking. It was fantastic! I did add the chipotle seasoning and it was wonderful! I learned how to make it here as well. I ended up with 4 quarts to PC while eating some today and some for tomorrow. Thanks for sharing!!

    I had tortilla soup in Mexico. It was amazing, too bad we can't can it their way. They do not cook it with tortillas. They slice the tortillas thin, they fry them in hot oil then sprinkle a handful over the hot soup. It reacts with the soup. It is fun that way. I would love to can your recipe for the winter. What puzzles me is the book we refer to does not allow for canning turkey. I wish I knew why.

    Thank you for sharing how to modify for the USDA recommendations. I have been wondering how to can some things that are not tested by the USDA (like you taught us in your canning course). It is nice to know that some family favorites might be able to be canned even if it is not in the Blue Book or the USDA book, etc.

    Hey Pam and Jim, I know you enjoy using your induction cooktop, but use the butane burner for video sake. Could you maybe cover the health concerns of both items? I’m ready to plop down some money on an induction cooktop because we have added solar to our home and feel more secure about having that option for electricity. BUT I ran across an article that said induction produces too much EMF for our homes….. 🤷‍♀️

    I'm stuck on Chick-fil-A's chicken tortilla soup but it's an expensive addiction. I'm thinking of using my home canned chicken and pints of navy beans or black beans, add a can of two of Rotel tomatoes/chilis and combine my jars to make a few meals for the week. Just need to add the corn chips/tortillas and the lime. I can almost taste it.

    Oh so timely, and just perfect for the coming of real cold weather! Pam, one question. Is it safe to use canned whole organic corn instead of frozen? Realizing that canned may be a bit overcooked, but I have two cases put away and would like to work on them.

    I hope y'all had a wonderful Thanksgiving. This looks so good! And if the temps drop again (we're having 70's for the next week here in MS), I will enjoy having some soup. I didn't have a turkey (I prefer chicken) but will definitely be making some with chicken. Could black beans (canned from the store) be added before canning or should they be added when heating it up?

    Pam, May I ask a question in regards to “The All New Ball Canning Book” …I realize you didn’t write this book, but I am concerned…many of us are new to Canning, there is a section beginning on page 274 that is about Canning Meals in a jar. On page 274 it give basic instructions on weighted & gauge canners …but there is nothing about elevation….shouldn’t the Weight be different for different elevations? Please forgive me if you have already addressed this issue on your channel…I might have missed it. At any rate I truly appreciate your efforts to help us learn the right way to preserve our food!       You should be able to google it. It’s standardized. I’d pull out my old ball book but don’t know where you live, 😉.

      I think there is a table in the front of that book--check p. 15. It is standardized so that table works for all foods anywhere.

    Perfect! I love your recipe and now I have a plan for the leftover turkey. I do have a QUESTION: You’ve mentioned in at least one video that you boil your canned food for 10 minutes before consuming. What is the reason for that, please?

      Just in case there is some botulism, I think. You have to boil it without a lid.

    What is that beautiful pot your using?

      The stainless steel pot is a “jam pan.” When I first started watching Pam and Jim’s videos, I had to get one of these when I saw her using it making cherry pie filling. They are solid stainless steel and very special pans. The name of the brand is called kitchen craft and you can find them on Amazon sometimes make sure you buy the one that has the markings on the inside that shows you your measurements.

    What would happen if the water is covering the jars. About maybe a half inch. 😢 I was pressure canning chicken in the Squatty half pints about a year ago. That’s all I could find at the market, anyways I heard someone say not to cover the water over the jar so I threw all the chicken away but I was just wondering what would’ve happened.

      The water can only get up to the boiling point, which isn’t hot enough to kill the bacteria in the food, if there is any in there.

    I’m wondering why the solids can only be half the jar yet there is recipes for chicken, carrots, celery and onion that fill the jar with added broth?

      Because that’s all they ever tested. That’s why so few things are approved- because so few have been tested.

      As Pam said, you have to cook those other soups (those with more than 1/2 solids) for a longer period of time.

      She isn’t canning this for as long of a time because of all the liquid. If you can turkey by itself with a full jar, you have to can pints for 75 minutes and quarts for 90.

      I grew up with that phrase. My mom was a depression baby, born in 1924. We either grew, or canned our food so we could eat all year long.
