Gluten-Free, Dairy-free Carrot Cake Recipe:
Cake Ingredients:
½ cup coconut oil, room temperature
1 cup quinoa flour
1 cup almond flour (from whole almonds)
1 1/2 tsp baking powder
¼ tsp kosher salt
¼ tsp ground ginger
¼ tsp ground cinnamon
¼ tsp ground nutmeg
¾ cup maple syrup
3 large eggs
1 cup grated carrot
¼ cup chopped walnuts
¼ cup golden raisins
Cashew Frosting:
1 cup raw cashews, soaked in hot water 5 min or overnight, drained
⅓ cup coconut milk
3 Tbsp maple syrup
1 lemon, zested
1 tsp apple cider vinegar
1 tsp vanilla extract
¼ tsp kosher salt
Directions:
1. Mix together coconut oil, flours, baking powder, salt, spices in stand mixer with paddle attachment until mixture resembles bread crumbs. Add maple syrup and eggs until mixture is smooth. Stir in carrots, walnuts, raisins.
2. Line 8" spingform pan with paper liner and spray with coconut oil spray, then dust with oat flour on bottom and edges. Shake off excess.
3. Bake at 350F for 40-50 minutes until cake tester comes out clean. Let cool 5 minutes before cutting.
4. For frosting, combine all ingredients in blender and puree until smooth.

Hi! I love drained, crushed pineapple and coconut flakes in my carrot cake. Could I add 1/2 c. pineapple and 1/2 c. coconut to this recipe and get a good result?
I made this great carrot cake, it was delicious triumph when I finally got to eat it, to start with the problem was I didn't have any quinoa flour, so I decided to try to make some from the quinoa that I had, I watched a video which suggested dry frying the quinoa before grinding, I think it made the quinoa seed harder, I tried to make the flour in the food processor, because the little grinder that I ordered hadn't arrived yet, the food processor didn't make much of a difference to the seeds, so I ended up grinding the flour in a mortar and pestle! It took me all day to make the cup of flour needed for the recipe and my hand was swollen the next day, my little grinder has arrived now so I can make this cake again now without all the hard work.

My Mother and I enjoyed this recipe. Next time I want to double the spices. My attempt tasted strongly of Quinoa. It was good though and I'll make it again.

1. could you substitute coconut flour or any other non-grain for the quinoa flour.
2. Do you have a recipe for bread or biscuits (non wheat/grain) that rises somewhat and is not so dense. I have tried sooo many recipes. Thank you, and the cake looks delicious and will try!!!
Unfortunately you cannot sub with coconut flour as it is far more absorbent than other grain-free flours, but oat flour should be fine! As for bread - yes, we have a paleo one! As for biscuits - sort of, we have a "strawberry shortcake" recipe that's somewhat like a biscuit!

That should be fine - they usually absorb the same amount of liquid. Please let us know how it turns out!
Do you soak the cashews on the counter or in the fridge?
Do you soak the macadamias overnight too?
If you're making a frosting with raw macadamia instead of cashew then yes, you also need to soak overnight.
How can I replace it quinoa flour plz?
Do you have the recipe written down anywhere?
You left the SHELL on the almonds? I doubt it. Probably meant the natural brown outer coating on the nut meat.
Ah yes! Not the shell, they are just *un*blanched almonds made into flour :)
