GLUTEN FREE CARROT CAKE RECIPE
1 cup grated carrots
1/2 cup blanched almond flour
1/4 cup coconut flour
2 tablespoons tapioca flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 teaspoon cinnamon
1/8th teaspoon all spice
3 eggs
1/3 cup coconut oil melted
1/3 cup maple syrup
1 teaspoon vanilla extract
1/4 cup raisins
1/4 cup chopped walnuts
3/4 cup plain Greek yogurt
1/4 whipped cream cheese
1 tablespoon maple syrup
INSTRUCTIONS
Preheat the oven to 350 degrees F. Grease a 8x8 baking dish with coconut oil, butter, or cooking spray.
Grate carrots using the large holes on a box grater, set aside.
In a large bowl combine almond flour, coconut flour, tapioca flour, baking soda, salt, cinnamon and all spice. Gently toss everything together.
In a separate bowl combine eggs, coconut oil, maple syrup and vanilla extract. Whisk until well combined.
Add the wet ingredients to the dry and mix until all of the ingredients are just incorporated.
Stir in raisins, carrots and walnuts. Transfer batter to greased pan and pop in the oven for 30 minutes or until cooked through. Cool completely.
Combine yogurt, cream cheese and maple syrup in a medium sized bowl and mix well with a hand mixer. Be sure to get out all the lumps and bumps, mixing until you have a smooth creamy icing.
Spoon over the top of the cooled carrot cake and spread into an even layer. Serve and enjoy!

Just made this. I love that the recipe is super simple and it tastes great! The texture and aroma is like regular carrot cake, but has lighter texture. The frosting tastes better after a few hours or even the next day. I'm eating a cleaner carrot cake but not missing the carrot cake experience at all. Loving your recipes....

Great recipe! Most of the Bob's Red Mill products can be found at Big Lots, very much discounted, but a little close to the expiration date.
That's where I get mine. Never disappointed. One might be enticed into purchasing all they can afford because of the price reduction but like you said they are close to expiring. Fear not, there will be more. They don't seem to go too long before restocking!

Thanks so much for the tip!! Expiration dates don’t freak me out. These things are usually fine way past the expiration date, and last much longer, even years. We have our senses; we can tell when things are rancid!They just legally have to put an expiration date. Pretty much all of Bob’s baking flour/ingredients can be frozen and preserved for much longer too. That’s how I stock up on flour and such! Thanks again. 🙂

I absolutely agree. Companies have to legally add expiration dates. I've used countless foods past used by dates & always buy products nearly past 'sell by' dates - usually at discount price.
(many things can be frozen to extend life)

Love that the recipe used 3 eggs, quick to put together. I made muffins, replaced tapioca with psyllium husk, with pecans. I liked the idea of yogurt, I used sour cream instead. I roasted coconut and some pecan to toss on top of the muffin.

Just made it! I didn't have tapioca flour so I looked through comments and couldn't find answer to the question, what to use as a substitute. I looked up a substitute and came across corn starch but divide in half. So I used 1 tablespoon instead of 2 [tapioca flour] in oven now.... looks delicious. Thanks for sharing such great recipes!
