    BAKED BLUEBERRY LEMON OATMEAL CUP RECIPE
    3 cups rolled oats
    1/2 teaspoon kosher salt
    1 teaspoon baking powder
    1 cup unsweetened vanilla almond milk
    1 cup plain greek yogurt (or apple sauce)*
    2 pastured eggs, beaten
    2 teaspoon lemon zest
    1 tablespoon lemon juice
    1/4 + 2 tablespoons monk fruit**
    3/4 cup blueberries
    1/4 cup sliced almonds
    Preheat over to 350 degrees F.
    Spray a 12-cup muffin tin with cooking spray or coat with coconut oil or butter to ensure nothing sticks.
    In a large bowl combine oats, salt and baking powder and gently toss together.
    Next, mix in milk, greek yogurt, eggs, lemon zest, lemon juice and monk fruit and stir together until everything is incorporated and you have a rich, thick batter.
    Add in the blueberries and almonds and stir until just combined.
    Evenly divide the oat mixture between all 12 muffin cups and pop in the oven for 25-30 minutes or until the muffins are set through and lightly golden brown on the top.
    Cool completely before removing muffins from the pan and enjoy!
    I like to store these muffins in an airtight container in the fridge where they will happily last up to one week.
    To reheat the muffins, you can slice them in half and place them in the toaster oven or pop them in the microwave for 20-40 seconds.
    *You can sub in applesauce or mashed banana for the milk dairy, if you want to keep the oat cups gluten free.
    **Monk fruit is a plant-derived, calorie free sweetener. This is the one I am using. If you prefer, you can sub in coconut sugar (or really any granted sugar) in it’s place.

    These weren't exactly what I was expecting. They are a very solid hunk of oatmeal! The taste wasn't bad, not much lemon taste, so if I were to make them again, I would certainly double the blueberries to make them lighter and more flavorful.

    Just made these with my fresh picked blue berries. I kept them vegan using ground flax instead of egg, maple syrup and applesauce instead of yogurt. Worked great, love the berry, lemon ,almond combination. It is a delicious afternoon snack. They haven't even cooled off, just ate 2 right out of the oven. Genius to have oatmeal on the go !

      @ladyleanerI know you made this comment awhile back but i am just now seeing this video 😂 idk about the apple sauce I’m going to use the same ratio as she did yogurt. As for the flax egg replacement its 1 table spoon of ground flax to 3 tablespoons of water to replace one egg. So since she’s using two just double up. Im going to try this recipe today wish me luck.

    I LOVE LOVE this channel! I’m a “clean” eater. I’m not Keto paleo or whatever else there is. I’m just a person who eats as clean as I can. I don’t avoid most things but I do avoid processed and refined foods. I eat FOOD not junk. It took a long time for me to learn that food is my fuel and not my comforter...All while I absolutely enjoy my food and desserts

    OMG!!! I just made these and they are delicious! I added a touch more lemon juice cuz it was squeezed out and use 1/2 cup walnuts . That's what I had on hand. Went with applesauce and OMG... Dani... I can't tell you how good they are with the blues popping and the lemon. So soooo good

    Thanks so much for the recipe! Just made these this morning using blueberries and raspberries and added chia seeds (but skipped the lemon zest) also adding a little bit of brown sugar. They were AMAZING. Gone shortly after as I had guests over. Just popped another dozen in the oven--thanks again !

    I made two dozen muffins at 33 weeks pregnant using the base of the banana chocolate chip recipe. I did 1 dozen blueberry, banana, chocolate chip, and the other one I did coconut, banana, chocolate chip! They're in my deep freezer now for a late night feeding snack when baby gets here, lol. Only three more weeks! 😁😬😁
    I think I'll make these today, I love blueberry and lemon!

    Just made these and all I had was cinnamon applesauce 😂 but omg they were soooo good! And I was so happy that they’re all oats and no flour because I am breastfeeding and oats are supposedly great for milk supply! Will have to make a big batch to keep in the freezer and pull out as needed for a quick snack or breakfast while feeding the little one 😊 thank you!

    Dear Danny, your recipes are really the best yet! I love to have a recipe that won't make me feel that I'm breaking all the good eating habits I've tried to keep. My sister Janey got juvenile diabetes when she was nine years old and I was 7 1/2 years old back in March 1955. It was a life changer for our whole family of 9. I always make something that I think she could eat with me.
    She is now a convalescent home and no one can visit her because of Covid shut downs. Please pray for her.

    Hay thanks for the inspiration. We changed these to chocolate strawberry cookies😁. We used strawberry yogurt ( this I never though to do till I watched your video), frozen strawberries, dark chocolate chips and cacao nibs. We make banana cookies by smashing bananas adding nut butter, coconut oil, and hemp seeds to oatmeal. Since my oldest is allergic to eggs the banana helps everthing hold together. This is the base then add whatever we want, chocolate, nuts, coconut, etc. No extra sugar added or baking powder needed. These fill us up and we feel good after. Thank you for the yummy ideas😁.

    Love these muffins! I use more lemon juice and zest, one minute organic oats and more blueberries. One minute oats I like better because it’s a finer texture once the muffins are baked. I’ve baked them before and I’ll make them this way again. 💖👍

      Jean Rita its like stevia, a plant. You can get drops or granulated with erythritol in it. Stevia also comes granulated with erythritol in it.

    These look delicious. Monkfruit sweetener IS HIGHLY PROCESSED. They separate the skin and seeds, press the juice, evaporate it, crystalize it, mix it with something to cut the excess sweetness (often erithritol). It hasn't been well-tested in humans or animals. I'm probably going to use regular sugar instead. We know what that does to us.

      @@staceykersting705 Stevia in natural form is a leaf. If you make it granulated, what do you have to adulterate it with? It doesn't naturally form crystals.

    I have been making these for months now and love them. I vary them a little, sometimes using orange zest, cinnamon/Chinese 5 spice. I never use extra sweetener since I use applesauce and I sometimes add very ripe bananas. I usually have one with my coffee in the morning, or sometimes if I need a snack. If I want a light dinner I’ll break one up over some plain yogurt with frozen berries. Thank you for these. Since I don’t like a bowl of oatmeal as a cereal, because of the gooeyness, this is a great alternative. Also, I use ground flaxseed to bind rather than egg most of the time.

    PERFECT 👍🏾! I'm changing my eating habits to combat high cholesterol, pre diabetes and high blood pressure. Going on a high potassium, Omega 3, whole grain, high polyphenols conscious eating habits. I'm gonna sub the yogurt with unsweetened apple sauce, add vanilla extract, ground flax seed, honey and 100% cocoa to it. It'll change the flavor I know but with a coup of decaf coffee I'll have no guilt.

    I just found your Clean & Delicious videos. I just made the Blueberry muffins!!! I did not have any Greek yogurt, so I used applesauce!! These muffins were delicious, easy to make. I can't wait to make the apple and banana muffins. Thank you!!!!

    These were amazing! I used a little bit of extra lemon zest I substituted applesauce instead of the yogurt, I also used vanilla sweetened almond milk . I ate 5 right out of the oven!!! Can’t wait to try other flavors!

      I replaced one 🥚 with 1 tablespoon of Chia seeds and 3 tablespoons of water (stir and let sit for 10-15 minutes). Other times I have used 1/2 ripen 🍌 for egg substitution or 1 tablespoon of ground flax + 3 tbs of water and I whisk until gelatinous & creamy

    I made this recipe today and it came out super delicious 👌🏼 but I didn’t put almonds and I used orange and strawberries instead of lemon and blueberries and regular yoghurt instead of greek and it came out so good and moisty😋 and about 115 calories per muffin😉

    I LOVE these muffins!!!!! I’ve tried several of your muffin recipes tho these are my fav! I added extra blueberries on top (pressed in slightly to the batter for an extra pop of blueberries!) Love the lemon flavor! Yum!!!

    When I made these, I forgot the eggs, but they still turned out delicious. I also split the batter before I added the lemon. I made six muffins with apples and cinnamon, and the other six with the lemon and blueberries. I did add a little crumble topping, but they are delicious, hearty, and filling.

    I would use paper cups to keep the muffin tray clean & easier to take it with you as a snack. Also, I would add dried cranberries to give more flavor to the muffins.

      I don't use paper liners either. I use a brush to shmear each cup with a bit of coconut oil. Either way have to protect the muffin when transporting it.

    Hi Dani, I can't wait to make these muffins! I'm a big fan of your chocolate banana muffins. I find they are a great start in the morning and I love making them for my mom to give her something nutritious as she runs out the door. I'm also so happy because I love lemony things and I have wanted to try baking with monk fruit. I have PCOS and I need to keep and I on my glycemic index. What a great choice with the almonds! Thank you so much Dani for working so hard. I really appreciate it and I appreciate the feeling that you give us that you are in this with us. Oh, I also love that you put a link on the tools that you use for example the bowls or pans. I always buy it and I am glad to know that I am using what you use.     Just made these this morning. So delicious! I used evaporated milk and the applesauce as substitute, and walnuts instead of almonds. Love all of the variations for this recipe.

    This recipe looks delicious. I love that you are using monkfruit in this. With the pumpkin spice muffin cup recipe, I always add a little monkfruit to give it a little more sweetness. Thank you for sharing, Dani!

    Interesting recipe, I hate monk fruit as a sweetener because it tastes "off". I might try it with maple syrup.

    ❤️ your recipes but if you really want clean eating then all ingredients need to be organic which is so easy to do. Glyphosate is a huge contaminate in oatmeal, lemon, blueberries etc. which is why organic is so important. Bob’s Red Mill is available in almost every grocery store. I was naïve until I got the C diagnosis and have since really cleaned up my diet. Just made your pumpkin cookies and they were SO good 😊

    I'm late to join this following, but my search for a CLEAN muffin that I could feel good about eating, led me to try Dani's creations. I have loved ALL of them! I actually crave them and so thankful for these recipes.
