Potato, spinach and feta are also delish. I like to mix in some carbs, so I'll probably try the version with beans first. But they all sound good! Also, silicon muffin forms are great for this...I tried doing them in a metall form but I had a hard time getting them out...despite it being non-stick material and I used some oil, too. Now I "line" the metall form with the silicone moulds...they're a little wobbly on their own.

Using the slow cooker was great too. I did a little taste and it was amazing. Perfect for mornings where I have no time for breakfast. I can just prep it the night before, put it in a Tupperware and just take and go in the mornings. Is there any healthy and delicious recipes you can do with a slow cooker. I am still new to it and I am confident there a lot of great healthy slow cooker recipes out there. Thanks!

I tried lightly sautéed sliced mushrooms as a base, then diced red, yellow & orange bell peppers, chopped grape tomatoes, a bit of seeded jalapeño, some scallions and shredded cheddar in the midsection. Yum! Not only good tasting, but pretty too. I made a huge bowl of loaded black bean and corn salsa yesterday so will use that in the next batch.

When I took the ferry to SF for a hair appt, I forgot to bring my protein bar for breakfast.stupid because I have low blood sugar. So I stopped at Peet’s coffee shop and got an egg muffin and small coffee for $8. Sounds like a lot, but not for SF. It was so delicious and it held me over for four hours until I had lunch. They all look good, but I’d go for the spinach & feta version. Yum!

Perfect for using with a toasted English muffin & topping with your favorite sauce...be it hollandaise, Mexican salsa, pesto or whatever. They DO freeze well too. chorizo sold in tubes at the grocery store...usually near the hot dogs.
Now I will do it your way. Just started air frying and using quality silicone cups. Followed another You Tubers who told me to combine everything first. My wilted chopped fresh spinach floated to the top half as did the other ingredients. Am confident your way will solve this problem. Quickly tired of just one flavor but you've solved this to for me. Ordering the large Pyrex measuring cup too. Thank you.
