  • If you're looking for an easy & healthy way to meal prep breakfast for the week, then you need to try these delicious and savoury egg muffins.
    They're super easy to meal prep in advance, making them great to grab & go to save you time in the mornings. Say goodbye to boring old scrambled eggs, or making an omelette from scratch when you're rushing to get ready.
    They're low carb & packed with protein and nutrition, fueling your mornings with energy while keeping you feeling full. And you can customize them with all sorts of ingredients & flavours to suit your tastes.
    Each recipe will yield 6 egg muffins, but you can 2x/3x the ingredients to batch prep more at a time.

    BAKING INSTRUCTIONS
    ► OVEN: 20 mins at 350°F/177°C (or until cooked)
    ► AIR FRYER: 12-15 mins at 300°F/149°C (or until cooked)
    *Note: Do NOT use air fryer for Method #3 with water bath
    ► Let egg muffins cool for 5 mins after baking
    METHOD #1 - Ready-to-use ingredients
    ► 1: Chop ready-to-use ingredients into tiny pieces, such as veggies, cheeses, hams
    ► 2: Whisk egg mixture w/ seasonings in a measuring cup/bowl
    ► 3: Spray 6-cup muffin pan w/ cooking oil to prevent sticking
    ► 4: Pour egg mixture into muffin cups in equal amounts
    ► 5: Fill each muffin pan cup w/ ingredients
    ► 6: Pre-heat oven or air fryer, then bake
    METHOD #2 - Sauteed Ingredients
    ► 1: Saute ingredients w/ seasonings in skillet, then set aside
    ► 2: Whisk egg mixture w/ seasonings in a measuring cup/bowl
    ► 3: Spray 6-cup muffin pan w/ cooking oil
    ► 4: Pour egg mixture into muffin cups in equal amounts
    ► 5: Fill each muffin pan cup w/ sauteed ingredients
    ► 6: Pre-heat oven or air fryer, then bake
    METHOD #3 - Sous-Vide Style
    ► 1: Prepare add-ins
    ► 2: Blend egg mixture + cottage cheese w/ seasonings in blender
    ► 3: Spray 6-cup muffin pan w/ cooking oil
    ► 4: Pour egg mixture into muffin cups in equal amounts
    ► 5: Fill each muffin pan cup w/ ingredients
    ► 6 (optional): In a tray (slightly larger than muffin pan), fill w/ boiling water about 1/4 to 1/2 way up the pan. Then place muffin pan on top of the water tray.
    ► 7: Carefully insert muffin pan + water tray (optional) into pre-heated oven, then bake
    TIPS:
    ► Use whatever ingredients you like! This recipe is easily customizable
    ► Use 6 large eggs per 6-cup regular-sized muffin tin
    ► If you wish you use fewer eggs, substitute 1/4 cup egg whites for every egg you want to take out
    STORAGE: Refrigerate in air-tight container for up to 3-4 days, or freeze for up to 2-3 months. When you're ready to eat them, just re-heat in the microwave or oven.

    (Meat option: 147 calories/egg muffin)
    (Veggie option: 93 calories/egg muffin)
    Egg Base
    ► 6 Large Eggs
    ► Garlic powder (1/4 tsp / 1.2 g)
    ► Onion powder (1/4 tsp / 1.2 g)
    ► Salt (1/4 tsp / 1.2 g)
    ► Black pepper (to taste)
    Fillings - Option #1, Meat (3 egg muffins):
    *(2 tbsp each):
    ► Spinach
    ► Onions
    ► Ham
    ► Shredded cheddar
    ► Chili flakes (sprinkle)
    Fillings - Option #2, Veggie (3 egg muffins):
    *(2 tbsp each):
    ► Spinach
    ► Red bell peppers
    ► Green onions
    ► Tomatoes
    ► Shredded mozzarella
    ► Dried parsley flakes (sprinkle)

    (Tex Mex: 205 calories/egg muffin)
    Egg Base
    ► 4 Large Eggs
    ► Egg whites (1/2 cup / 125 ml)
    ► Taco seasoning (1/2 tbsp / 7.5 g)
    Fillings - Saute ingredients:
    ► Ground pork sausage (1/2 lb / 225 g)
    ► Red bell peppers (1/4 cup / 40 g)
    ► Green bell peppers (1/4 cup / 40 g)
    ► Onions (1/4 cup / 30 g)
    ► Corn (1/4 cup / 45 g)
    ► Taco seasoning (1/2 tbsp / 7.5 g)
    ► Tex Mex cheese (1/4 cup / 30 g)

    RECIPE (METHOD #3):
    (Broccoli, Turkey & Feta Sous Vide: 134 calories/egg muffin)
    Egg Base
    ► 4 Large Eggs
    ► Full fat cottage cheese (1/2 cup / 125 g)
    ► Tabasco hot sauce (1/2 tsp / 2.5 ml)
    ► Garlic powder (1/2 tsp / 2.5 g)
    Fillings - Saute ingredients:
    ► Onions (1/4 cup / 30 g)
    ► Turkey breast (1/2 cup / 60 g)
    ► Steamed broccoli (1/2 cup / 50 g)
    ► Feta cheese, crumbled (1/3 cup / 50 g)

    When my daughter was young and had to catch the bus at 7am , I always made , froze , and heated her breakfast for her on the way to school .     Try doing it with Italian seasoning and sliced/ shredded pepperoni and parmesan on top for a pizza 🍕version. Or layer the egg then a whole slice of pepperoni, then more egg before the parmesan on top. YUM! 🍕😋

    Yummy! Love the vegetarian ones. Another good addition is Mexican chorizo with onions tomatoes bell peppers. Chorizo also is also available in vegan versions and same with cheese 😊

    Broccoli cheddar spinach with onions. very tasty. you can use a white cheese instead of cheddar. like white cheddar or white American cheese. you take fully steamed broccoli and spinach and blend them up in the nutri bullet. then add the eggs and the blend to the muffin tin. stir and cook 20 minutes @325. very tasty.

    omg thank you! finally i can make something with cottage cheese (which i hate, but i need for the protein), ill try this out.
    I tried the overnight oats, and they were pretty good and i was not expecting to like them because I'm not a fan of dairy products, but it was great and now they are part of my diet.

    These have been a go to breakfast thing for a while now, the only difference is i use the silicon muffin cups instead of baking spray, i like the idea of using a large measuring cup to pour the eggs more easily, and i usually make a dip with sriracha mayo or just sprinkle green cholula or tapatio on them, these are also perfect travel foods, going to have to try that sou-vide method next time i make them. nice video, im going to have to subscribe.

    This seems like a really great way to use up left over produce. I'll definitely be trying this out! Do they get dry after a couple days? The ones I buy from starbucks or other places always seem quite dry.

      Hey there! I personally don't find that they dry out after a few days, but I typically re-heat them in the air fryer or toaster oven which helps. Or if I'm re-heating them in the microwave, I just use a wet paper towel to cover it. Either way, it's definitely a great way to use up leftover produce like you said! Thanks for watching!

    I cant get a muffin pan thst fits my air fryer oven. I suppose microwaving these the muffins would turn out rubbery???

      Hi there! I haven't tried microwaving the muffins myself, but if you'd like to use your air fryer, I recommend using little individual silicone muffin cup liners (you can find them on Amazon)! You'll be able to fit at least a handful of them inside an air fryer 😀 Hope that helps!

    Looks delicious but i eat 4 eggs a day so it sounds like i’d be eating a full batch of these to still eat my 4 eggs. Which doesn’t sound like a bad idea but i was hoping to still get that protein in and not have the muffins go that fast.
    Could add more protein to the mixture but eggs is something i wanna eat the entirety of and get all of its nutrition, all four eggs. Nice recipe tho, i may try it!

    I really like your videos, approach, voice, quality! All at the highest level! The only thing I’ve wanted to say for a long time is about the music))
    It was very cool when I heard it for the first time, but I’ve noticed lately that I can’t bring myself to turn on your cool videos precisely because of the music. The thing is that the trumpet is like a separate voice in the video and prevents me from focusing on the meaning of the video. The recipes are different, but the music is the same and not in the background, but as if with a “separate voice.” I hope my opinion will be useful.
    Maybe I’m wrong, but I wanted to share with you, because I respect your work and don’t want such a small but significant detail to prevent you from developing your channel. Good luck)

    Some good recipes. But why so few videos? You should do some videos on steak, pastas, chicken, pork, shrimp, other meats, sandwiches, etc.

To answer your question, I take a lot of pride in the quality of my videos and put in a great deal of time and effort into making each video as good as it can be - and often that results in spending a significant amount of time on producing each video (from planning, to recipes, script writing, filming, editing, etc.). It's quite an involved process and usually takes me weeks to create a video from start to finish, which is why I'm slowly building up my catalog of content. I'm glad you enjoy them though, and will try to come out with more content as much as I can!

      Each microwave is different so you'll have to see what works best for you - but if you're reheating refrigerated (thawed) egg muffins, I'd suggest 40 seconds and then adding 10 seconds in increments if you find it needs a bit more time. Hope that helps - thanks for watching!

      Not exactly too much protein. Eggs alone are a good source of protein plus the number of other micronutrients. If one is eating this without a carb or low carb, it is a good way to keep the weight on the safe side. And she's used less or no oil, except for cheese.

      How many RUclipsrs have made those egg muffins. No way to know where it originated. I was making this videos egg muffins when I started South Beach diet around 1980. They were called breakfast on the go. Better with a splash of milk or half and half. To thick and eggie without. Every Keto, Adkins and low carb dieters have made these for DECADES. People aren’t stealing. It’s a RUclips thing. Humanity is safe for the time being.

      @@sjs9354 😂yeah maybe we are still save, and thanks for the back story, it just she uploaded the video a week after he uploaded his, with the same ingredients and temperatures (which is okay maybe that’s how the recipe goes) but it was just the timing that seemed suspicious, and if I were to do a RUclips video about something I would credit the person I got the idea from even if that person wasn’t the original creator, but maybe it’s just a me thing but that’s what bothered me.
