Can these be made into muffins? If yes, how long to bake them and at what temperature?
Yes I've made them as muffins too. They take about 15-18 minutes
Is there an alternative to tapioca or arrow root? Maybe cornflour or coconut?
Yes cornflour or 1-2 extra tablespoons of coconut flour will work

can i use almond flour instead of coconut flour?
Yes, you can try. You'll probably need double (or more) the amount of almond flour to get a similar batter consistency.
I don’t have access to any liquid sweetener, what is the option you suggest pls. Thank
You can substitute a granulated sweetener. You'll need about double the volume amount to achieve equal sweetness
Can we use psyllium husks instead of arrow root
It might. I use flaxmeal in other coconut flour recipes and I think that works similar to psyllium husk here
Finally.. A perfect GF/DF and SF carrot cake, with DF frosting!! 😋😋Am I dreaming? 😂

can we skip the tapioca or arrowt?
Yes. The cake will be denser, but still good without a starch

@@salwashami2586 You can try replacing the starch with cassava flour, or almond flour if you need it low carb. But thanks to the add ins like shredded carrots its still soft and pleasantly moist even without any starch.
