For keto / low carb bread you can use xantham gum as a thickener for the batter, 1/4 tsp - one quarter tsp per every cup of flour .. if it's a little less than 1 cup still 1/4 tsp is fine if you're adding ground flax besides flour

I don't think any of these coconut flour recipes work without eggs. I've never had a problem with the starch in the blender method. Most starches need heat before they start to thicken as they would in a sauce or gravy

This is more like a quick bread recipe (since it is leavened with baking power and not yeast). So yes the structure will be a little cake like. That's why I like toasting the slices for more of a crunchy bread consistency

Do you have any suggestions for replacing the eggs? I normally use homemade grounded 1 tablespoons flaxseed to 3 tablespoons of water and then put it in the refrigerator to thicken up.
I don't think the flax egg replacement works well in this recipe. It makes the bread very dense and gummy. Instead, I would suggest to try soaking the flax meal that the recipe already includes and see if that hydrates the batter enough.

I have a paleo coconut flour banana bread version without any seed butter here leelalicious.com/paleo-banana-bread-recipe/ It is still delicious but the texture is more obviously different from a wheat flour baked good. While I haven't tested the, you should be able to adjust the other flavors in a similar way with 1 extra egg and about 1/4 cup extra coconut flour. Hope this helps

I am not sure about oat in flax of flax. Olive oil may have a strong flavor unless you use lite olive oil. If you can do dairy, melted butter works or another flavorless oil

Yes, like Katharine already says, substituting coconut flour is tricky. It behaves very differently from other flours. Every 1/3 cup of coconut flour equals about 1 cup of regular flour or gf blend. You can certainly try it with this ratio in mind, but you'll likely have to adjust the batter with either more flour or more liquid as you go along.

I realized coconut flour is cheaper and goes a lot further than almond flour. And now we have realized almond flour and almond milk doesn't agree with my husband anyway.
Unfortunately the best way to make coconut flour work for baking is by using eggs. Flax and chia egg substitute or psyllium husk are sometimes used but they all have denser results
Absolutely love these recipes! However-I seem to encounter a problem with the dough not rising high enough as in your videos. I'm struggling to find out what my problem is. My bread comes out about 1/2 inch thick. It deals with you fluffing the egg whites. I do follow your instructions to the letter, but for the strangest reasons, mine comes out rather flat.
I am so glad to hear you like the recipes and sorry to hear you are running into a rising issue. There are a few reasons this may be happening. How large is your loaf pan? Could it be the batter is just spreading out more? Mine is 8x4 inches. How old is your baking powder? Is it still active? Have you tried checking your oven temperature with a thermometer? An oven that runs too low could cause the batter not rising much. And a too high temperature could cause it to rise too fast and then collapse.
Unfortunately not for large loaf breads. If you turn them into smaller cupcake sized bakes flax egg substitute can work. In a large loaf this flac egg substitute makes super dense bread unfortunately

Being diabetic has been hard especially since almost all recipes include nuts or seeds. Do you have any options without any kind of nut or seed?

There is no need to adjust the other measurements when omitting the arrowroot/tapioca
