I baked it yesterday, but used desiccated coconut instead of flour, added sweetener and baked it in a wider form (we don't have the sizes here) and the result was a coconut cake and it was so soft and juicy that we had cake for breakfast this morning. Couldn't wait until afternoon. THANK YOU!!!

I just made this as I'm ill and wanted something quick and light to eat . I don't think it tastes eggy but it's in the texture. I put butter and diabetic blackcurrant jam on it . It was lovely. I think I'll be making it again . ,K

Did it hide the coconut scent/flavor? Because whenever I bake anything using coconut flour the only thing I used that covered it up was cinnamon.

You could use baking soda, after all this is a cake with no sugar.

maybe you should add Xanthan Gum next time.
Try putting it in the refrigerator. The cold will give it a smooth texture, and will keep the bread together.
