So I only used three eggs and was adding coconut flakes without measuring but by the look of the final consistency, similar to the one of your mix. But based on experience and feedbacks, 1 loaf of my keto bread with 27 g (3 tbsp) of whole psyllium husks ground until half its original volume, you will need only 1 to 3 tsp of preground psyllium powder. The 21 g of baking powder is based on double acting baking powder, so you do not need to reduce it. Coconut flour when used in bread tends to be heavy and dense hence, more rising agent is required to help with the rise. Also, if you are using whole psyllium husk, you need to grind it until half its original volume then weigh it. Personally, I feel it does not taste eggy. It's probably masked by the coconut flavor. It does not taste sweet to me, but I can taste the salt
