Easy Homemade Banana Bread Recipe
Preheat oven to 350 deg F
Ingredients
2/3 cup sugar
1/3 cup soft margarine (or butter)
2 large eggs, unbeaten
1 3/4 cup all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts (Optional)
1 cup mashed overripe bananas
Directions
Mix sugar, margarine, eggs for 3 minutes. Add the flour, baking powder, baking soda, salt, walnuts (if used) and bananas. Grease a regular loaf pan (would also do well in a silicone loaf pan). Pour in batter and bake for 1 hour or until toothpick comes out clean.
Cool, slice - serve and enjoy!

Made it yesterday. came up the best moist banana I have ever had. I wanted to eat the moist banana bread i have had when i came to the USA for the 1st time. But I never found or could not make. However, this recipe is beyond my expectations, more perfect than the one i had. Thank you so much.

To be fair, I never once said it was MY recipe.🙂 Thanks for filling that credit in, I was simply showing how we make banana bread in our house.
@@SusanMillard Friend, there is no copyright to recipes (list of ingredients and instrucions) . no cookbook can caim creation, their only right is to layout and pictures. You will note there are hundreds of similar recipe all over the place.
But I needed a recipe with reviews and yours had that.
I ended up finding the caribbean cookbook of the recipe i used years ago, not mych different from this oen, so i will use that.

Looks easy enough, thanks for sharing. I would however, add vanilla or banana Extract for a even more intense flavor. It is delicious.

Thank you for the recipe. The only suggestion I would do is to add a 1 tsp of cinnamon and 1/2 cup of raisins to the recipe. (if you want more raisins, then full cup, but if your using walnuts, then 1/2 cup because you want to balance it out)
Quick trick/tip: soak your raisins for 30 mins in water that you boiled on the stove. (do NOT boil the raisins with the water) This trick rehydrades the raisins a bit and brings out their flavor a bit more and makes the raisins a bit more softer to chew. ☺
I've seen so many recipes online not using baking power, just baking soda only and I'm glad to see someone FINALLY used baking power along with baking soda! Thank you!!! How else are you suppose to get your bread to rise? Don't think banana bread has magical powers to rise. 😉 Thank you for using both and sharing a wonderful recipe. ☺ Have a great day!

Susan Millard ~ you're welcome! ☺👍 Also, I forgot to mention in trick/tip is after you soak the raisins for 30 mins in the water, drain them and make sure they are completely cooled (most important) before you add them to the recipe because if they aren't completely cooled, and you add them to the recipe, the warmth from the raisins will actually start to cook the other ingredients already in the bowl. Yikes!! Nobody wants cooked eggs in their banana bread!! 😝😶 Remember only 30 mins for the soak, otherwise raisins will become mushy-mushy. You're only doing this to rehydrate them and get the firmness/toughness out. ☺ Think of it as botex for raisins!! ☺
Just happy that I found a recipe that has both baking soda AND baking powder in the recipe!! Unless banana bread does a magic trick on self rising, I'm sticking to both ingredients to give it that extra nudge.

Thanks for coming back and letting me know about cooling the raisins before adding them...makes sense they would start cooking the other ingredients but if you weren't thinking about it...I have noted that down right under the soak directions (for 30 minutes, check) Botox for raisins...bwahahah 😄 too funny. ❤I just watched a lot of recipes. Was gifted a huge amount of over ripe bananas. So I skinned, & zip locked, & froze, in 2 qty, 1 gal bags. I have a pot luck, & live in a rooming house. I've picked the most universal recipe, to appeal to the most people. I have to deal with possible nut alergies, & some people not having good teeth. For my own usage, I'd add chia seeds wheat germ or bran, chopped nuts, white chocolate, or butterscotch bits. You always have to omit things when it's made for a group of people: onions, bell peppers, nuts, the stuff of alergies, & that others find distastefull: ie poor old mr onion.❤🎉❤🎉 thanky you for your lovely universally loved banana recipe. ❤

I made it and it was really good- moist and light. I did however add a bit of vegetable oil and about quarter cup of water because I found the batter a little too thick at first. But it turned out great!

I knew this recipe looked different, to a lot of other ones. The others add 1/3 cup of milk, that sounds like a waste of milk. I like your idea of adding just water, & or oil, if you want a less thick batter. I also like your BS, & BP. Other recipes, only call for BS, aka: baking soda.

I have never used a mixer to make banana bread or any quick breads I will have to try that method out soon 😋 and instead of using bananas you an make pumpkin bread with scan of pure pumpkin and add some spices! Very good and moist
I was thinking the same thing. You could swap in just about any fruit, apples, pumpkin, squash, blueberries, blackberries, peach, pear, rubarb, shredded carrot,😅😮❤ sweet potato. If something has vitamins, & fiber, & leans on the sweet side, it could be a quick bread at a pot luck dinner, lol😂❤

Currently in the oven. I had to use use almond flour since I’m not at my own house (that’s all my fam had) and I added some cardamom and pumpkin pie spice. Dash of both. Will see how it turns out 😬

Update: I didn’t grease my pan right and the bottom burnt and stuck to the pan. HOWEVER, i salvaged the rest and its friggin delicious. This recipe is so easy.
