    This is a keeper. Now what I would do cause I hate to waste anything, Take the juice and mix in powdered sugar til it is a drizzle stage and drizzle over top of your cake

    This recipe was awesome! I used one cup of sugar and substituted bananas with ripe plantains! I added some walnuts and chocolate drops instead of the pineapple. Oh! What a delicacy! Thanks so much for this recipe!

    I just made this recipe.... sorta lol. We don't use cooking sprays because they are so unhealthy. However I used a silicone bread pan and used my own rendered lard. I halved this recipe as hubs and I don't eat a lot of sweets but we both love all things banana. I used brown sugar as i didn't have white sugar 🤦‍♀️. And I goofed on the pineapple measurements. That being said...... this is the best banana bread ever! It will definitely be my go to from now on 💚

    Insane amount of oil, Overkill on the sugar as well. I do like the ingredient of pineapple, Thank you for this original twist! I shall experiment by decreasing the oil by half and adding a little of the juice from the pineapple to give this gem the moisture that it deserves without the high fat calories from the oil. 🍌 🍍❤

      Agree @yvonnegeorge9034 - insane amount of oil: 3/4 cup would be plenty. The finished product wasn’t really moist: it was unpleasantly oily/squishy and I threw most of it out. Such a disappointment. Reducing the oil, and not draining the pineapple would give a much more pleasant product. Very disappointed with this recipe.

      Agree!! If people don't like the recipe, then here's a thought: Don't make it then! Some of us like to enjoy our food, including sweets in moderation. My mother-in-law loved sweets, and she put sugar in everything. Sadly, she died so young because of eating all that poisonous sugar. She was only 98 years old, poor thing.

    Add a cup of coconut to the recipe.. Instead of the pecans use raisins... You'll love it. I made Hawaiian Banana bread and used butter instead of oil, plus coconut, and raisins.... with no nuts. When summer gets here or once it gets up to over 75 here at home, I will make it using extra virgin unrefine coconut oil.. (I keep my apartment at 65 degrees so if I used coconut oil I would have a pretty stiff banana bread using coconut oil, since coconut oil is solid and hard below 75 degrees.)

      Oh, my. I just went back and checked the video. When I watched eggs are added at about the 4:39 minute mark into the video. For this video, I also added text on the screen of each measurement/item; eggs are listed too right after they were added. If ever in doubt, full recipes are listed in the video description. Thanks for your comment and I hope you have a blessed day! 😊

      I agree, especially with the ripe bananas and the pineapple. Everyone has different levels of sweetness they prefer. I gauge the amount of sugar I use when making banana bread with how ripe the bananas are.

    The taste is so good but my loaf burned on the bottom. Could it be that I used an older black loaf pant? I checked for doneness and it took 65 minutes..was that too long

    How long to bake for a regular-sized bundt pan? I'm thinking of bringing it to a dinner for about 25 and want it to look pretty as it's sliced.

    • @stephsstovebystephaniethom7249
      @stephsstovebystephaniethom7249  4 месяца назад +1

      Depending on your oven, it would probably take about 1-hour. However, I would start checking it approaching the hour mark and cover the top (with foil loosely) if it starts to brown. When a long skewer inserted into the middle comes out clean, it will be done. It slices beautifully and I know your guests will love it! 🥰 Thanks for watching and your question. Have a blessed weekend.

    The only difference in this and Hummingbird cake is the cake has 3 cups all purpose flour and includes the juice of the pineapple. The vanilla extract is 1 and 1/2 teaspoon instead of 2 teaspoons. I also do not put nuts of any kind in my cake. It doesn't need it. This recipe is not from Hawaii, but from a Caribbean island, and is named after a hummingbird with the name of Dr. Bird Hummingbird.
