Nothing like good old Durbs curry … Here in Melbourne where i now live the samoosas are bloody aweful… India style with gravy nogal … i miss mutton but true mutton not goat like they use here..

This a good archive video for authentic mutton curry for people without a traditional background. Most recipes online miss the masala because that's a very indian thing, you normally only find the different masala mixes in places with dense indian populations. That would probably be a good video idea, making durban masalas from scratch.

My cooking is very similar with regards to ingredients but your quantity is more which gives it that lovely fragrance and depth of taste. I did have to put about 2 cups of water as our potatoes were soft cooking. Very pleased with this and is my standard now. Thank you and keep well.

You can always have it without curry leaves. Recipe is nothing new. Round the world its cooked in similar fashion. You name it Durban or Denmark doesn't make any difference 😅😅😅
I've made it with the curry leaves and without...and it definitely makes a difference. I've eaten curries in a few countries and never had one that tastes the same as a Durban mutton curry. 😊

Hi Wesley. The ingredients when cooked slowly releases it juices and it could also be because I’m using an AMC pot. It’s also according to your preference, if you like it braised somewhat like a thick gravy then leave it as or if your prefer more gravy ( then you can add a touch of boiling water towards the end like I did or when you add your potatoes).
