    INGREDIENTS
    For Marination -
    1 kg lamb
    1/2 cup yogurt or curd
    salt
    2 tsp Kashmiri chilli powder
    1 tbsp ginger garlic paste (Prefer fresh but can use store bought)
    2 green chilis
    2 tbsp coriander powder
    1 tsp cumin powder
    2 tsp turmeric
    1/2 tsp garam masala
    For the gravy -
    3 tbsp oil
    4 green cardamom
    1 inch cinnamon stick
    5 cloves (Cardamom, cinnamon and Cloves can be replaced with additional 1/2 tsp of Garam Masala, but whole spices are preferred)
    5 bay leaves
    2 large onion thinly sliced
    Marinated lamb
    1/2 tsp garam masala as finishing spice
    Coriander for garnishing

    Just made this. I am a curry addict. This was fabulous. The taste is excellent. Not hot so good for most. I reduced it to quite a thick consistency. That’s how I like it. Don’t leave out the sugar as this seems to balance any sharpness of some of the ingredients. Has the taste of what I know to be a “staff curry” used in takeaways to keep the staff fed. Excellent. 🎉

    I cooked this recipe as is for a family function and everyone loved it including the kids. The adults have requested for a 'hotter' version the next time I cook it. So easy and quick.

    Thanks for the lovely recipe.
    I love making food from many parts of the world and also from my own part of the world. So much to explore and enjoy.
    But every time I decide to try another version of Indian curry dish, I am especially excited. Lamb curry has always been my favorite.
    Why is that, I ask myself? First of all, it never fails. You must really be clumsy to screw up a curry. The curry concept is so well thought out and almost waterproof. Thousands of years of profound experience and tradition went before . Of course it can get totally out of control, if you add far too much chilli or too many cloves or cumin, but the tolerance is quite high. And for this lovely curry of yours, I did not have coriander seeds to ground. But hey, it will be fine without, so I used a little mustard seed instead. I didn't have fresh coriander either, but I had parselly, and that will be fine too. But following a recipe like this one is almost guaranteed to be a success.
    The Indian cuisine is said to be one of the main cuisines of the World - the Indian, the French, the Turkish and the Chinese. Anyway, that is what some experts claim. I think, that these so-called experts forgot to include the South American cuisine, that was there long before the Spanish came. We must remember, that potatoes, cocoa, bananas, tomatoes,, tobacco, bell peppers ... AND chilli peppers all came from there.

    I have attempted many curries with some hits & misses.
    This is such an uncomplicated recipe with easy to follow video that I couldn't go wrong.
    And I didn't, compliments from all the family thanks to you.
    Just one thing, I have always associated lamb curry with tomatoes but you dont use any.
    Any reason why?
    Hopefully this is the first of many of your recipes I will try.

      Thank you. I have used yogurt instead if tomatoes. In this recipe, I think the yogurt balances out the dish better and also lightens the dish 🙂👍❤️❤️

      Yes it's a stainless steel plan. It's has a heavy bottom. It's good for cooking but has to be heavy bottom. You can do a lot of things with the fish. I will make some videos soon, but a quick suggestion would be, make a curry base with onion, ginger, garlic, curry powder and other spices you like, add coconut milk and then add the fish. Or batter fried fish with curry powder. ❤️❤️

    I know it’s not part of the recipe but I have some fresh curry leaves that need using, can I add fresh curry leaves instead of bay or both ? And if so would I do it at the beginning ? Many thanks 🙏

      Yes, if you like the curry leaf flavour, can add before adding the onions and also few leaves 10 mins before finishing. Don't skip the bay leaves. 🙂❤️❤️

    Nice method BUT cooking for that short period of 15 mins is concerning as I usually pressure cook for minimal 25 mins. Any tips? I try it anyways. Many thanks. ❤

      I am using New Zealand lamb which cooks fast. You can always use a slow cooker or pressure cooker using the same method. ❤️❤️

      No. I am using new zealand lamb which is very tender. If you are worried about tenderizing, use a pressure cooker or cook for longer till tender. 🙂👍❤️

    I though u have to cook ot much longer to get the soft meat.i will try but i never have all the ingredients and cant b bother marinating lol

      I have used yogurt, which gives more richness and tartness, so there is no need for tomatoes👍❤️❤️

    Ingredients
    For Marination -
    • 1 kg lamb (2.2 lbs)
    • 1/2 cup yogurt or curd
    • salt
    • 2 tsp Kashmiri chilli powder
    • 1 tbsp ginger garlic paste (Prefer fresh but can use store bought)
    • 2 green chilis
    • 2 tbsp coriander powder
    • 1 tsp cumin powder
    • 2 tsp turmeric
    • 1/2 tsp garam masala
    For the gravy -
    • 3 tbsp oil
    • 4 green cardamoms
    • 1 inch cinnamon stick
    • 5 cloves (Cardamom, cinnamon and Cloves can be replaced with additional 1/2 tsp of Garam Masala, but whole spices are preferred)
    • 5 bay leaves
    • 2 large onions thinly sliced
    • Marinated lamb
    • 1/2 tsp garam masala as finishing spice
    • Cilantro/Coriander for garnishing
    Directions
    1. Mash ginger, garlic, chilies and salt to make a paste in a mortar and pestle.
    2. Make lamb marinade: lamb, half of the garam masala, yogurt, salt, ginger-garlic-chilli paste, coriander powder, cumin, turmeric, chilli powder and mix well together. Marinate for 15 minutes or up to overnight in the fridge.
    3. Prepare the onions: remove core, slice thinly, open up. Start a hot pan with oil and add bay leaves, cinnamon, cardamon and cloves until fragrant. Add onions, browning until golden, but do not burn or it will be bitter.
    4. Add lamb and fry until oil separates. Once that occurs, uncover and allow liquid to evaporate.
    5. Add hot water to make gravy. Reduce heat and simmer until lamb is tender. Add a pinch of sugar and remove whole spices. Add the last garam masala, stir to combine and add chopped cilantro.
