Nikuman or Butaman is steamed pork buns.
I know not all of you have a steamer, and I know you want the easiest recipe, so here you go ;)
This Nikuman is absolutely delicious with fluffy buns and crunchy bottoms!!!
---------------------------------
Super Easy Nikuman (Steamed Pork Buns) using a frying pan
Difficulty: Super Easy
Time: 40min
Number of servings: 8
Ingredients:
A
* 200g (7oz.) cake flour *I think all purpose flour is OK
* 1 tbsp. baking powder
* 2 tbsp. granulated sugar
B
* 100ml milk *water is OK
* 1 tbsp. sesame oil
C
* 100g (3.5oz.) ground pork
* 4inch (10cm) chopped long onion
* 1 tbsp. sake
* 1/2 tsp. grated ginger
* 1/2 tsp. soy sauce
* 1/2 tsp. sugar
* 1/2 tsp. sesame oil
* 4 chopped Chinese chives
* salt and pepper
cooking oil
sesame oil
soy sauce
Karashi (Japanese mustard) if you like
Directions:
1. Sift A in a bowl. Add B and use your hand to knead together until formed. Then form the dough into a ball and wrap with plastic wrap. Leave to set for 20 minutes.
2. In a different bowl, mix C by hand (hand is better but using a spoon is okay) until all ingredients are combined and smooth. Then divide into 8.
3. Divide the dough into 8 equal pieces using a bench scraper or a knife. Flatten out the dough with a rolling pin. Place the filling, pull and pinch the dough to seal like making a dumpling. (You can put water along the edge of the dough if it is too dry to seal.)
4. Heat cooking oil in a frying pan. Place the buns, then cook on medium for 1 minute. Add 180ml water, cover and steam the buns on med-low for 8~9 minutes until cooked.
5. Uncover, add a dash of sesame oil, and cook on high heat until the water is gone and crisp.

Outstanding! I love the little tip of dividing the big meat ball into 8 for each serving, it's such a neat way to organize and quickly chain the fabrication of buns up. I also appreciate to know I can still do it with a frying pan. Thank you very much! I keep your video on my favorite for later on ^^
Glad it was helpful 👍💖
At 0:37 I thought she was gonna say "Whatever the Fuck u like" 😂
Hello! I made this with both milk version and water version for the dough. I like the one with milk a lot better:) My family loved it! I am also expecting a baby few months away. Good luck to you and thank you for always your joyful posts! ありがとう☆
+Kate Melanie Quiamco yes! sesame oil gives nice flavor. i would say it is necessary~
I don't own a steamer, so this is just a perfect way to still make them! I never knew steamed buns could be made in a simple pan as well~
I love how expressive you are when you eat! makes me want to eat it so much more.
I used to think prepare nikuman was super difficult, but now with your awesome tutorial, I believe I can do it! Thx!!
I cooked Nikuman using your recipe with my daughter this evening. It was fun, delicious and easy! Thank you, Ochi. I like your recipe a lot better than traditional ones.
I made these today following your recipe and they came out wonderful!! Thank you :) I love watching your videos. You make Japanese cuisine fun to make!
i watch only yours and another ladies when it comes to making japanese food. my husband was there for three years and loves the food and so i have never been but working really hard on making stuff for him to eat for dinner.

Thank you for this video! It brings back many memories when my mother made meat buns when I was a child :) will need to try this soon.
This recipe is exactly one I've been looking for since yesterday! We were almost about to go out and buy a steamer and now I'm so happy we don't have to ^_^. Thank you for sharing this easy and amazing recipe for steamed buns!
They taste so much better If they not absorbe the water
They look great with the crispy bottom! Never seen that before, totally going to try this!
I tried this recipe yesterday with some changes to the filling (leek instead of long onion, plus regular chives instead of chinese chives) and it was absolutely delicious. Even my 1 year old daughter loved it. She devoured her piece. Thank you for sharing! I will definitely be making this again (and it really was SUPER easy!)!
Great video and wonderful, easy recipe. Thank you so much for sharing! On my list to make.
Perfect, now this is a dough recipe that doesn't take forever to make!
you are pro 💕
Congratulations on your 300th video! Milestone! The nikuman look amazingly good~ =B
I absolutely love the taste of homemade nikuman but I've never liked going through the huge effort to make them. Thanks for showing us a shortcut! :)
i understand you!
wow this looks easier than using yeast for the dough, like the classic bun.....and cooking it directly like gyoza seems simpler too....thanks!!
I made these today and they were delicious! I used all purpose flour and they still came out perfect!~ Thank you for such an easy recipe ^^
I'm trying this right now. Thank you very much for sharing!
+Faylina Meir happy to hear that :)

We just ate this for lunch and my kids actually liked it!!!! Thanks !
Aww my nikuman all opened,after the effort i put in sealing them nicely...but the taste was great!!!
tryed this recipe out today and the results where beyond my wildest dreams as a first try they tasted delicious (Could have looked better but I mean it's a first try) Thank you so much for this video!
Thank u sooo much for this recipe. I tried it the traditional way, got a steamer and everything, but this way was much quicker and came out better. I used chicken instead of pork and it came out great. Ur channel is the best.
:)
I just made these for the first time! I did one and a half times this recipe, so 12 instead of 8. The only real issue I had was when I cooked them I forgot to cook them on medium heat for a minute first. I also covered them with a bowl instead of lid because I didn't have a big enough lid. When they were done, they stuck to the pan 😅 they were still very tasty though 😋
Thank you! Great for the first time! Next time 😉👍
Omg the ones you can buy at the store are so good.My grandma and I enjoy the store bought Nikuman
Ooooh! that's so smart! I really like that, it's way easier than the homemade steamer setup I rig together. Thank you for sharing :)
So easy and delicious! Thanks so much for sharing!
Wow thank you so much for responding to my question Ochikeron, you are amazing and I love your videos, thanks! :D :)
I've tried this recipe twice, very delicious. Today I made double batches (16 buns), all eaten in 10 minutes.
I discovered nikuman while traveling around Japan years ago. I probably ate at least one a day while I was there. It's one of my favorite foods, but I can't find them anywhere near where I live. Most recipes I've found look like a lot of work, but this one looks like one I'll be able to make! Thank you so much!
Amazing 😉
I made this Nikuman a few days ago and it was so delicious! It was so easy to make them. Thank you very much for this recipe. :)
Ooh! I’m going to make these for my children’s dinner tonight! I’m sure they will love them 💓
Hope you enjoy 😉
I finally tried them today and they are super tasty *-* Thank you so much for the recipe :)
what an excellent recipe thank you for sharing!
Oh my god this is so much simpler than steaming them! Also love the filling recipe :)
One of my best memories from Japan was when in winter I left Kyudo club I would go in my bike to the 7 Eleven near by and get myself a Nikuman and eat it while the snow was coming down.. such good memories
I made this but I used pancake mix ( I was desperate!) & I had to omit the sesame oil in fear of a severe allergic reaction. This came out great! I loved it.
what kind of oil did you use instead of the sesame oil?
いつも素晴らしい…
Wow, wonderful tutorial! I made Nikuman for a very first time, I have absolute no experience with steamed dough, Asian cousine in general but it is amazing. Great flavour, exact proportions! Thank you so much!
Wow that looks so yummy!😋 can’t wait to make them for Lunar New Year ✨❤️
Really nice you channel. Recently I went to the Japanese culture festival in my city, in Brazil, and stay very impressed with the culture of you. Sooo Cool.
Great work!
i need to try this. been wanting but seemed like so much work lol. Loved at the end when you whispered "itadakimasu" hehe
Perfect! Thanks for sharing!
How exciting, I can't wait to try! I think if you poke a little hole in the top of each one before cooking (for the steam to escape), then they might not break open when cooking.
This looks heavenly
I'm going to make these with beef - these look good!
At the time of this post, I have done this recipe a certain number of times to perfect it. Along with sifting the cake flour, the baking powder and the granulated sugar, I recommend adding corn starch. See how the bun's outer layer looks even more appetizing this way! I think I will try to make it with sugary red bean paste filling, next time.
This looks really good! I shall try to make this! Thank you for the recipe Ochikeron :)
All your reciepts look pretty good!!!
And all your bento are so cute :3
Thank you for all of this pretty videos!!
I made these, they were great. The only complaint I have is that it took me about an hour to make, lol. Thanks for the recipe!
Instead of pork, I chopped up some boneless chicken breast into small pieces, and I diced up some green bell pepper/chinese leek. Added some chili flakes for mild spice, soy sauce, and black pepper, and it turned out amazing! If anyone makes these, I suggest keeping a close eye out on them when the water has almost evaporated. If you leave them alone for too long, the bottoms will burn. I made this mistake, but they still turned out amazing!
This is my lunch today 😊 i try for the først time 😄 everything u make is lovely 💞
Once I tried to use yeast and it also made the buns very soft and fluffy~
I made them this evening for dinner, they came out perfectly!! Easy and tasty recipe! I love it!! You are fantastic!
great :D
OMG!!! I really loved this!
I even tried to deep fried the bun. Is so churchy and delicious. Love it very much.
