Knife Skills: How to Mince Shallots

  • Mincing shallots is not as essential a knife skill as, say, learning how to slice and dice an onion, but a properly minced shallot can spell the difference between a sweet, aromatic, and subtle vinaigrette and one that's overly pungent and onion-y.

    Not bad, but, you always do the horizontal cuts first, then the vertical cuts. Prevents you from having to do that sawing motion. If you do the horizontal cuts second, you have to hold it together with more fingers, increasing the chance of cutting yourself. Doing them first, you only have to have at minimum 1 finger holding the shallot/onion down. Also don't use the sawing motion, just do a quick slice! Cheers.

    I needed this video. Whenever I mince shallots, my eyes water up horribly--dangerously so. Can't wait to try this next time my dish requires a shallot.

    horizontal cuts are arbitrary, unnecessary and difficult (unsafe) for noobs

      I'm afraid that's the only way to finely mince shallots (with a knife.) If you're okay with bigger chunks then that's fine, but it'd no longer be minced.

    If you search using the phrase “ciseler une echalote” theres a French chef who uses a similar technique and in seconds the pieces of onion are about a fifth of the size of this one.
    Trust the French to do it best.
