    One of the most complete instructional videos ever. Not only tips on cutting onions, but also on other key factors such as: securing the board, not dulling the knife blade, getting rid of the leathery parts of the onion, using the claw hand approach, etc. etc. Great job!

    I watch a lot of cooking tutorials on RUclips, and yours is hands down my favorite. Part of that is your voice and background music, which is very soothing; but more importantly is that unlike celebrity cooking videos, yours focuses on the technique, details, and practicality, instead of showmanship. In terms of trying to learn something myself so I can apply that knowledge next time I cook, your slower paced tutorials are always better. Thank you for doing these videos, and I hope your channel gets more and more successful!

  • @Lowkeylie
    @Lowkeylie 4 года назад +1

    To all the people saying your eyes are burning just watching this, part of that might be because of your knife.
    That burning sensation is a result of vapors released during cutting. If your knife is dull or sharp but not honed, you’re less cutting the onion (i.e. severing it into smaller pieces) and more crushing it.
    That causes a greater amount of those vapors to be released into the air, creating more of a burning sensation than the smaller cuts caused by a sharp knife.

    timesaving hint: when dicing the onion, the horizontal cuts are totally unnecessary. Just do the vertical cuts (both with the grain and against the grain) as shown in the video. Horizontally, the onion layers are already separate.

    Scooping the onions with the blunt side is something that you see even the best chefs neglect. Great video.
    Also great for salads and sandwiches or for onion rings: keep the onion whole, peel, slice a small bit out of the middle to steady the onion on the board, then slice from end to end. Turning to the other end when you reach the middle. You’ll end up with nice onion rings.

    With the dicing you don't need the horizontal cut (the first cut with the palm down on the onion). Just the vertical slices from the top down. Those slices break the layers so when you do the opposite and final cut the layers actually act as the horizontal cut.

    If you make the horizontal cuts after the vertical ones, you won't get all of the little pieces coming off. Also, when doing the horizontal cuts, angle the blade downwards slightly to avoid running into your hand. Even although the onion is protected by layers, it's still a good idea once you have peeled it to give it a rinse, especially if you're going to eat them raw.

    Three ways to chop onions without tears:
    1) Wear swim goggles
    2) Run a small fan over your work area
    3) Store your onions cold - the tear-producing chemicals in a cold onion will disperse into the air much more slowly than one stored at room temperature.

It was always a pain to cut onions evenly, so I usually degenerate into, "chop the hell up using the cleaver style -- cut the onion in half, then just chop with one hand on the handle, and the other on the top of the knife -- that often makes the sizes not ever even, and sometimes will fling the onion piece out the board.

    Really liked the way of cutting onion rings. Keeping the onion stable while cutting in rings is a disturbing thing, but your simple trick will help a lot. Thanks a lot.
