    We all know that if the instructor has an accent, he must be really good. This is true in mathematics as in cooking.

    I'm using that technique, I've always unfortunately ended up with large chunks of onions, but I'll definitely try with this.

    He could have easily peeled that with his hands after cutting off the ends and scoring the side lol

      Because when you have knife skills, the time spent picking up the knife, putting it down, picking it up, the difference is negligible, and if the bits of peel are sticky they don’t get stuck on your fingers with the oils/ moisture from peeling with hands

    Wait a min. If I use a machine I make the shallot bitter with heat? I smell bullshit!!! I'm going to cook these shallots, Do you suggest I Cook them with something other then HEAT ?

    That horizontal cut into Onions when fine dicing, is absolutely pointless, i never spend time doing so, as the fibers of the Onions are already making it finely diced without it :P
