    Galchi Jorim (Korean Braised Beltfish)
    Serves 3 to 4
    Ingredients
    8 oz beltfish (hairtail), cut into 4 to 5-inch pieces, washed, scrape outer silver skin and fins are removed
    !For the Sauce
    2 Tbs soy sauce amzn.to/1TdzO1T
    2 tsp fish sauce amzn.to/1ZBIzXI
    1 tsp gochujang, Korean red pepper paste amzn.to/1MHzrLv
    1 Tbs gochugaru, Korean red pepper flakes amzn.to/1ovcH6U
    1/4 cup sake or soju (rice wine) amzn.to/1RQLbr9
    1 tsp grated ginger
    1 1/2 Tbs chopped garlic (approximately 5 cloves)
    !Vegetables
    1 lb Korean radish, Moo or daikon (You can substitute to potato)
    1/2 large yellow onion, sliced
    2 green onion, sliced thinly into diagonal angle
    1 serrano or jalapeno, sliced thinly into diagonal angle

    You can marinate or pre-steam the fish with ginger or galangal (or even lemon/lime juice) as a non-alcoholic way to reduce the fishy smell. They do this commonly in Chinese and Southeast Asian cuisine.

    In the Caribbean and Africa, we marinate our fish overnight in lime, garlic, onion, salt, cilantro and hot pepper to season, remove fishy smells and firm up the flesh!

    Instead of overnight in the wine try sprinkling Kosher salt over the fish and pouring the wine over it, set aside while you work on the rest of the dish. Fish is ready to use in a half-hour. Thank you for the recipe it is one of my wife's favorites, I am still looking for Monk Fish soup, a lot of Korean restaurants no longer serve it in this area.

    First off, your outfit is so cute!! Secondly, great tip on how to get the fish smell out. Usually i can do okay with the scent but i find Korean fish dishes are really strong in smell. But that looks real good! Too bad on no rice - hee hee! Yum!

    I love fish. But, In Korea I find the fishes smells really strong, tried marinating with Indian spices, clean with lemon i felt nothing helped finally my sis suggested me to try washing with vinegar it magic😍.

    I love your recipes. orange chicken is super good. bulgogi too. buldak was extra yummy. I think I lost a post about gochujang though. making it look like restaurant servings, i.e. liquid instead of paste

    I think it's white grape juice or water 3 parts to rice wine vinegar 1 part in order to sub sake; I had to get creative for gochu items with miso/tomato paste mixed with cayenne/paprika, let me know if you have a recipe for seafood mix from hmart.

    @ Seonkyoung: my dad was a fisherman. And it took me many, many years to start cooking with fish since my childhood: Fish should never have a "fishy" smell. So be careful with that.
    It should smell lie sea water. A whole fish, if fresh, has clear eyes. The more "milky" the eyes are, the older the fish is since getting caught.
    I just made fish in a salt crust for christmas. (hint: no starch, no flour, no egg yolk in the mixture: Egg white, salt and a little water.)
    Just some herbs (don't forget tarragon) and lemon beow, intside the belly and above.
    Pls try it. And I bet you can provide an amazing sauce to it. (I'm an idiot when it comes to sauces, sorry!)
    The fish cooked inside the salt crust will turn out as juicy as you ever wanted it. 30 minutes at 360°F or 180°C is enought. Let it rest for another 10 minutes before braking it open.

      I can eat any fresh fish, with no problem. I'm just very sensitive about 'not so fresh seafood' products.

    Hi Seonkyoung I have never heard of this dish. Here in Australia we don't have that fish I don't think, I've never seen it anywhere, I'm wondering what would be a substitute? By the way you look beautiful.

      +FitAnge S any other fish will work great for this recipe! Beltfish has very mild flavor, so please do use freshest fish you can find at market! ❤

      +haha you yes! then you don't need to cook as long as this recipe! Maybe cook 7 to 9 minutes depending on the size of the fillet.

    I am so sensitive with that fishy smell that I lose my appetite when the smell gets into my nose....... everytime my mother cooks fish and I smell the fish I end up cooking ramen noodles XD ha.ha.ha.ha I'll tell my mother to marinate her fish dishes with that :) GREAT DISH SEOKYUNG //:D.
