I used only the overnight (in the fridge) soaked chickpeas to unlock the important enzymes and proteins and eliminate the anti-nutrients (leptin, phytic acid, etc) whiteout altering the texture and taste of the legume. I’m wondering if sprouted chickpeas are still optimal for making flour out of them easily. You can try and see how it works 🙏
