How to Make an Amazing Bread Out Of Chickpea⁉️

  • With just a few simple ingredients, you can create a delicious and wholesome chickpea bread that's perfect for sandwiches, snacking or for your breakfast toast. The chickpeas are soaked overnight to ensure a soft and tender texture, while the addition of eggs, baking powder, and salt helps the bread rise and achieve a light and airy consistency. Topped with a sprinkle of sesame seeds, this bread bakes to a golden perfection, offering a soft and delectable flavor without even noticing it’s made with chickpeas!
    Give this recipe a try, you’ll enjoy this nutritious and flavorful chickpea bread that's both gluten-free and protein-packed 😍
    Instructions:
    Drain the overnight soaked chickpeas and rinse them thoroughly. Place them in a blender or food processor.
    To the blender or food processor, add sour cream, eggs, olive oil, baking powder, and salt. Blend all the ingredients together until you achieve a smooth and creamy batter.
    Once the batter is well blended, pour it into the prepared baking pan covered with parchment paper, spreading it evenly.
    Sprinkle sesame seeds generously over the top of the batter, ensuring they are evenly distributed.
    Place the baking pan in a preheated oven and bake for ~40 mins at 365°F or until the bread is golden brown on top.
    Once baked, remove the chickpea bread from the oven and allow it to cool down for a few minutes.
    Slice the chickpea bread into desired portions and serve it warm or at room temperature.
    It can be enjoyed on its own or used as a base for sandwiches.
    Ingredients:
    1 cup (175 g) dried chickpeas, soaked overnight
    1 cup sour cream (or dairy or non dairy plain yogurt, Greek yogurt or cottage cheese)
    2 eggs
    2 tbsp. olive oil
    ½ tbsp. baking powder
    ½ tsp. salt
    ~ 1 tbsp sesame seeds for sprinkling on top
    These qualities made 8 large chickpea bread slices.
    Macros per 1 bread slice are as follows:
    Energy: 201 calories
    Protein: 8.47 g
    Fat: 10.73 g
    Carbohydrates: 18.25 g
    Fiber: 3.2 g

    Very interesting. I saw on FB someone ask if canned chickpeas could be used. I think it would be like using cooked chickpeas for falafels, you can but the texture is not good.
    Because this uses soaked chickpeas, I’ll bet that a dehydrated felafel mix with your dairy and egg additions would work better for texture than using canned (cooked) ones, and the seasonings might be nice for savoury uses.
    Can’t wait to try this, chickpeas soaking now.

      You are absolutely right that using cooked canned chickpea is probably les appropriate for some optimal results like here. It’s true that, the secret to a bread like texture is in the starchy part of the raw chickpea and that is less the case with cooked chickpea. Even, i haven’t tested it, i think the mixture would still give some kind of bread-like structure but probably less airy and solide than here. I always have those questions, and it’s funny, because I create this channel to “convince” people to cook and enjoy simple recipes with wholesome ingredients, in the first place 😅

      The chicken peas may need to be drained for a while to extract some extra moisture from the canning process. Going to work on this recipe as to bake it on a panni or waffle grill.

      It looks like it is a vegan recipe hence no eggs or dairy. No everyone can tollerate dairy myself included so this original recipe is perfect for me 🤗

    AWESOME! I'm gonna try this recipe for sure! I can't eat wheat, or potatoes, BOTH OF WHICH I LUV, and so searching desperately for an alternative, and tried the Almond & Coconut Flours both of which have their place, but not good for everything, and this chickpea bread recipe could be the one to fill the gap for me!

    Instead of using a cookie sheet, can a small mini loaf pan be used? Looks wonderful.

      Legumes (chickpeas or lentils) batter tends to be more dense, so yes, you can use any pan or loaf pan you like, just make sure you fill it not too high (1/3) to allow the bread to be more airy and soft 🙏

    Do we need to keep both rods(top and bottom) of OTG On while baking bread?

      My oven works with only bottom part for the baking and that is sufficient the bread goes golden even on the top part. You can try that too and see if it’s OK for you (otherwise, use the broil for a minute or so, once the bread is well cooked through) 🙏

      You can substitute the egg with an extra 1/2 cup of sour cream but the bread will be more dense and less airy 🙏

      I don't eat eggs and just replace them with a flax "egg". (1 TBS ground flax meal with 3 TBS water to replace each egg)

      You can just replace the eggs with an extra 1/4 cup sour cream. It will work but the bread might be slightly denser (less fluffy) 🙏

      You know, I have made the choice to use somehow a fat-rich dairy product like sour cream to get the bread soft and smooth. Otherwise, chickpea or lentil breads tend to be more dense without eggs and fat 🙏

      I haven’t tried myself but I tend to think, it will work as well. May be the bread will hold together less tightly than with wholesome chickpea because of the starchy part that’s missing from canned (cooked) chickpea 🙏

      Yes, you can but you have to be careful not to fill your loaf pan too high, legumes tend to be more dense and thus may not cook evenly all the way through quickly like with regular flour 🙏🥰
