    I like how he emphasizes washing the rice. I used to use the finger method when I worked at US restaurants but now I just know if you put one cup of rice you're going to need twice as much water. If you're one of those that thinks washing the rice is not necessary make one batch of wash rice and one batch of non wash rice and you will see and taste the difference

      You are right , We need to wash rice mainly because of the way it's cultivated and stored before it gets into sealed bags 🙂 rice contains not just startch but also lot of dust and impurities which will go inside our body if we do not wash it properly 🙂

    I was taught by my Pilipino friends a similar method. I rinse until water is clear and add water, however I touch the top grains of the rice and measure the water to my first knuckle. You measure from the bottom and the second knuckle...it was interesting to me because I measured both ways and I didn't have to adjust my water at all! they were both right on and my rice was excellent!

      Theres nothing curious about it. An knuckle is a knuckle and it deosn´t make a difference, whether you use the top of the rise as an starting point and ad an knuckle, or the botton of the pot and addind the high of the rice on top.

    I’ve never cooked rice before without it being boil in a bag or using a microwave, I used this technique and my rice turned out amazing, this is gonna save me money as it’s so much cheaper to buy a large bag of rice as opposed to the pouches or boil in the bag ones, thank you 👏👏👏

    I first saw Ken Hom Cook rice on tv correctly (the way my mum cooks it and most west Africans). I was so happy to see someone cook rice right and uncle Roger says the same. Its not just the east Asian way.

    This rice cooker is perfect! I use it only for me ruclips.net/user/postUgkxviiltW7NlHbp_VL_bLbIkbLAvILVhnia and sometimes me and my friend so the small size is really great for counter space since we never need to make all that much. I have been using it now for about 2 months and it still works perfectly. I use it for both rice and vegetables (better for harder vegetables like green beans and carrots, it made my broccoli way too smoosh-y for my taste). It keeps your rice on keep warm automatically which I really like, and I’ve used a few of the settings, flash rice, white rice, brown rice, and steam, and they all work super well for me, although I don’t like smooshy rice so I’ll usually use flash rice. It’s super easy to clean either in dishwasher or hand wash, and it’s pretty easy to get rice out of the grooves by where the container comes out. I assume this one will last me a long time but if I ever need another I will definitely be getting this one again!

    wash rice
    finger method for 1:1 water rice method
    bring rice to a boil, then stir once
    right after put on lid and let simmer for 10 mins
    then turn heat off but do not remove lid for 5 mins

    This is absolutely perfect! I've never got the amount of water and heat right, so my rice was always either hard, or turned to mush. But with these instructions it turned out amazing!

    This video is making fluffy rice (rice to water ratio is 1:1).
    This is different from making stir-fry rice (rice to water ratio is 1:0.9) !
    Fundamental stir-fry rice is a combination in sequence of garlic - very hot oil (for classic aromatic fragrance)-> salt - very hot oil (fried salt releases a special saltiness fragrance) -> chopped onions (for sweet taste) -> add prepared cooked dry rice (rice to water ratio is 1:0.9 or use left-over fluffy rice) -> scrambled egg(s) -> soy sauce (for additional saltiness taste and mild Monosodium glutamate (MSG) - Umami seasoning) -> last but not least, fresh chopped green onion leaves on top of stir-fry rice (for additional present freshness smell and presentation.
    You can add-in your local favor(s) such as
    1) carrots and peas
    2) meat or/and meat floss
    3) different sauce(s) (suit for the locals)
    4) Hot Jam (from Jamie Oliver Fried Rice show)
    But no matter what... Try to follow the the classic stir-fry rice cooking method and enjoy the success first. Then It can open up your world of joyfulness to enjoy all around world classic rice cuisines.

      volume = area x height
      for example, volume of one Cup = area x 1 portion of finger length,
      volume of two Cups = area x 2 portion of finger length,
      volume of three Cups = area x 3 portion of finger length,
      so on so forth.

    Definitely need to get to know your stove. In my kitchen, this exact recipe would result in crunchy, undercooked rice. I have to do one notch above low for 15 minutes with a 5 minute steam off heat. Low on my stove is like having it turned off 😂

      Honestly a lot of them do and the hygiene reasons aren't really a thing to worry about in the west. Rice comes packaged in a sealed container and doesn't contain anything you wouldn't want to eat where I live, so the only reason why you'd wash your rice is to remove the starch in the surface (which I like to do but it's okay if some people don't).

    I was taught the finger thing loooong time ago works great. I have this weird old pot that is thick and makes perfect rice every time . I don't even remember where or when I got it, I've had it that long. My favorite rice is Jasmine

    Me cook rice like: after washing rice, use the rice water to water plants, and basically just eye measure the water level when it covers up all the rice just by a bit(3 cups of rice)

    My rice cooking recipe Malaysian
    Rice ( depends on you )
    Wash the rice like video but only 2 times ...
    Then pour the water in , we don’t measure .
    Just rub the rice until it is equally flat (all process under the water )
    Then stick ur finger on top the flat rice but below the water
    If the water is too much than the first joint of your finger then pour it out a little bit , if less then pour water into it
    Hope you guys like my way of making rice

      Actually this water measurement makes more sense ... if we measure above the flat rice otherwise if we have a hole then the amount of water needed might change depending how much rice we are cooking & how shallow or deep the pan is

    Ok we measured the water with our finger n it still came out to be two cups of water. Hey we aren't going to hate on tradition but the 2 cups of water to one cup of rice works great too! 🤷

      It's 1 ¼ to 1 ½ cups of water to 1 cup of rice for me. That's close to the finger method.

      It will depend on the rice you use. Default 1:1 works fine but some rice depending where its grown and the quality will need less or more water

      @@brianzembic I don't exactly know how to do it, but you probably need to see where the rice goes to on your finger and proportionally put the water a few millimeters higher. What are the proportions? Idk, up to you 😂 They probably change according to the amount of rice, so good luck!

    Personally I measure by eye, so just covering the rice. Also I don't cook for full 10 mins, maybe 3-5 mins then steam for 20 mins with heat off. Turns out perfect every time. No stodgy stuck together rice :D

    I just cooked my jasmin rice for meal prep and i gotta say: god damn, it’s so nice! The texture is on point, no water whatsoever. Although I planned cooking it for tomorrow, I just had to eat multiple spoons of it. Thank you kind sir for still producing content, I think that I’ll watch more of your videos in the future.       This is basic plain steamed rice. Consumption of plain steamed rice is meant to clear your palete between different courses of other dishes. If you want a little flavor, add a teaspoon coconut oil or toss in a stick of Chinese sausage (lap cheong 臘腸) before cooking.

    Huge fan of uncle Roger, used your video to figure out the fiiiiinger method. Rice would have been perfect but I forgot to stir after the boil. So it stuck together. But for my first time cooking rice. It was pretty good.
