The Best Black Pepper Crab Recipe | A Must Try Famous Singapore Dish

  • This video recipe will show you how to make the best black pepper crab at home. Black pepper crab is a very famous dish in singapore and definitely a must try upon every visit to singapore. With it being such an icon and having such a marvellous and complex flavour profile, it can be daunting try to recreate the authentic taste at home. However, as you will see, the recipe is actually very easy and one of the best ways to enjoy an authentic restaurant quality experience. Hope you will try making singapore black pepper crab soon!
    Note: the black pepper sauce is also very versatile and can be used with other seafood such as prawn or fish since fresh mud crab can be expensive and more suited for special occasions.

    The full recipe is below

    1 fresh mud crab (~1kg), cleaned and cut to pieces
    3 tbs whole black peppercorns
    1 tbs dried shrimp, rehydrated and chopped
    3 shallot, chopped finely
    3 cloves garlic, chopped
    3 birdseye chilli, chopped
    50 curry leaves
    1 tbs soy sauce
    2 tbs dark soy sauce
    2 tbs oyster sauce
    ⅛ tsp salt
    1 tbs sugar
    40g butter
    Peanut oil
    Grind black peppercorns into coarse pieces.
    Toast on low heat for 2-3 mins until fragrant.
    Set aside.
    Deep fry crab pieces on high heat in peanut oil.
    Fry in batches to ensure oil temperature is maintained.
    Frying should take 3-4 mins with an additional 1 min for the thicker claw pieces.
    Tip: dry the crab as much as possible before frying to reduce oil splatter.
    Once fried, drain each piece and set aside.
    In a small amount of peanut oil, fry dried shrimp on medium heat for 2 mins until golden brown.
    Set aside along with most of the oil.
    In the remaining oil, melt butter.
    Add shallot and fry for 3-4 mins until it turns light brown.
    Add garlic, chilli, and curry leaves and fry for 1-2 mins.
    Add toast black pepper prepared earlier and fry for 1 min until fragrant.
    Add dried shrimp and oil prepared earlier and stir through.
    Add soy sauce, dark soy sauce, oyster sauce, salt, and sugar.
    Stir until sauce is well combined and has thickened slightly.
    Add crab and mix until evenly coated.
    Serve immediately.
