- Singaporeans love seafood, especially crabs. Apart from our famous Chilli Crab, Black Pepper Crab 黑胡椒螃蟹 is another favourite style that Singaporeans love. If you've never tried before, you might want to head up to Eng Seng at Joo Chiat. I haven't tried them for a while now but the last time I ate there, their black pepper crabs were one of the best I've tried in Singapore. Just google Eng Seng for more information. Stay too far from Eng Seng? Then try Roland's recipe and let us know what you think. It's finger licking good! Yum yum?

Ingredients:
Serves 6 pax
4 tablespoons of coarsely grounded black pepper
70g of butter
Some cooking oil
1 whole red onion - thinly sliced
5 cloves of chopped garlic
One handful of curry leaves
2 cups of water
2 tablespoons of oyster sauce
1.3 kg of crabs
1 teaspoon of sugar
2 tablespoons of dark soy sauce
Some cornstarch solution

I watched this video today and got so inspired that I had to make this dish for dinner. I live in Canada so unfortunately I don't have access to the best ingredients. Hi chef. How did you prepare the crabs before putting them in the gravy? I see that they are not yet cooked because of the color. How did you separate them into pieces without cooking them first? Thank you so much.
Dispatch them humanely (I hold the crab on its' back and use a cleaver down the centreline), then clean (remove top shell, remove guts & gills), separate the pieces how you like, then cook.
This brings me back to when I had black pepper crab in Singapore. So good!

Hi Ujvala. Wow I can feel your love for black pepper crabs 🤓🤓👍🏻👍🏻👍🏻 yes with this recipe, you no longer need to use black pepper sauce. You can just follow the exact same steps as we did. If you like it more spicy and savoury, add more black pepper and oyster sauce. Oyster sauce wise, you can use any brand you can get in India. No problem. Happy cooking! 🤓🤓🤓
