Lordy, love the adventure of going through your videos. This looks simply amazing. What mushroom did you use? I love baby bok choy, Chinese broccoli and Chinese chive. Do you suggest any differentiation in when to these. Love your channel. You all are so creative and I truly appreciate how you've changed how I cook.
Hi Rebecca. Thanks so much. You’re really generous with your kind words. Really appreciate. We used Chinese dried mushrooms. You can also use canned button mushrooms. No problem. For Chinese broccoli and baby bok choy, these are great choices for this recipe. You can just give them a quick blanch before adding everything to a pan to stir fry them with the rest of the ingredients. Hope this helps.
This the best I didnt have the tofu, mushroom and maw (which looked good) on hand but eveything else with a bit of blanched kirkland stir fry vegetables and some spainard octopus in soy oil and garlic it came out beautifully
Wow!! Spice N’ Pans cuisine. Sounds so good!! Thank you so much, Marika for using our recipe. We’re so honoured to be talked about as part of your family discussion. Woohoo!!
Hi Rolland thanks for this dish, l’ve cook it for CNY Eve dinner and the roast pork. Is was so enjoy by my family. Thank you so much, will be learning from you. 🤣🌹
Yes can. We have both air fryer and oven recipe. Here you go. Airfryer - ruclips.net/video/wPZbCUa0Vck/видео.html Oven - ruclips.net/video/B7QuhLb_8UM/видео.html
You’re most welcome Misty Rose. Personally I prefer egg tofu over normal silken tofu because of the taste. If you can’t find it from your local Asian supermarket, you can make your own too. You can follow our recipe here. ruclips.net/video/M1yQ8-w2Hs8/видео.html Just omit the use of spinach. Hope this helps.
Hihi. So so sorry for our late reply. Yes you can use fried tofu from the shop and yes you can add some Chinese cooking wine at the end of the cooking proces. happy cooking!
👍 marvellous, l’ve been trying to cook this dish but not nice. Will try again from your methods the way you present. Thanks Rolland. Wishing you and all your family happiness and blessings this New Year 2019 .
Do you really need to add sugar into the marinated water at first, are they fresh and sweet taste at the beginning? And need to add baking soda to make them crisper? Are they healthy? Any other option? Looking good, but not sure a some steps are really necessary! 🤔🤭
Looks quite yummy but I never understand why with seafood meals everyone uses Chicken Stock instead of Fish Stock. It is simp[le to make or you can buy tetrapaks already made.
GREAT DISH... I CAN'T WAIT... TO MAKE IT AND EAT IT... THE ONLY THING I SHOULD HAVE TO OMIT IS THE ''FISH MAW'' I DONT' KNOW WHAT IS THAT. (it looks like calamari)
Hihi Medinalba. Yes you can omit fish maw. No problem. That’s actually fish stomach. Feel free to add your favourite seafood or ingredients to this dish. Happy cooking 🤓
Correction: Fish maw is the fish's swim bladder. I would advise replacing it with baby abalones instead, after I watched a video about the fishes' swim bladder exploding when hauled from the sea due to the difference in water pressure from bottom of the sea and surface.
Looks delicious. Is there a change in cooking times if I use Chinese broccoli instead? Thanks again chef. After a few weeks of travel ready to recreate your recipes.
Mmmmm.... I really looove the broccoli!! Thats my favourite vegetable!! That taste soooo delicious and yummy dish!! Seafood flavour taste sooo goood!! Great dish!! See u anytime!!
LOL. Maybe it’s just a Singaporean trait - kiasu 😂😂 it’s not during the cooking that we’re worried the colour will be off. It’s after cooking that we’re worried about. Hope this explains. Happy cooking!
Hey Roland, I do appreciate your reply. So in other words, I could do without the oil and salt, yes? Once again, I've enjoyed your videos, both my son and I.@@spicenpans
Hi Claire. I think we got it from Thailand. Sorry we can’t remember much because our fish maw we’re usually gifted by our moms or friends. There’s no brand to them. Maybe you can try this: Soak in hot water for 20-30mins, remove squeeze dry and rinse with water and squeeze dry again. Repeat until no stale oil smell. Hope this helps. Happy cooking!
I tried making it today and it's exactly the same as the ones we order from the restaurant. Super delicious! Thank you for sharing!

Hi, do we need to rinse the seafood from the ice bath bf blanching?
Hi Chin Geok. There’s no need too. You can just leave them aside.
So no need to rinse and directly balance them After removing from the ice bath, thks

where did you buy egg tofu?
If it is 10 seconds of blanching the broccoli and carrots why would you need oil or salt to keep its color? 10 seconds?
