Classic soy sauce pan-fried noodles (with spaghettini)

  • This dish is one of my weak spots! Let me introduce you to a creative twist on a classic Chinese dish and show you how to create delicious soy sauce noodles with a unique touch - using spaghettini instead of traditional chow mein or udon noodles.
    Why spaghettini? Well, first, it doesn’t stick together like some other noodles (perfect for lunchbox to bring to work or for leftovers next day). Second, it’s finer than spaghetti and when it’s cooked al dente and then stir-fried, it’s actually more chewy than the regular chow mein.
    So, give it a try with just a few simple ingredients in a sizzling pan, and get ready to dig in after just a few minutes!
    Ingredients:
    Spaghettini
    Garlic
    Red chili
    Green onions
    Chives
    Honey
    White pepper

    Here's a useful tip, take a ladle full of the pasta water filled with starch as a reserve BEFORE draining the rest of it. That pasta water filled with starch thickens your sauces making it creamy when you add it into the pasta in the pan.

      Hi there, thanks for the tip! I usually reserve some pasta water when making Italian pasta. But since soy sauce noodles aren’t typically creamy, at least not the kind that I like, I actually want to rinse off that extra starch before stir-frying. Still, your suggestion is great and I'll definitely remember it for future cooking adventures!
