I love soy sauce chow mein. I would often order this in Chinese restaurants while traveling in Asia. Since we can't achieve wok hei at home, giving the noodles some blow torch love before serving mimics that smoky wok hei restaurant taste.
I boil my steamed noodles for about 3-4 mins. You are right don’t follow the package direction. I thought it was ok to rinse it with cold water to stop it from cooking further and to let it cool faster.
I've never seen that noodle stretching tip before. Very useful thanks. I always put a dash of sesame oil in at the end but I'm not sure if this is traditional.

Haha, I like how she said "Today, while no longer cheap..." That's for damn sure. Everything is overpriced due to inflation. So frustrating and annoying. I remember before the pandemic you could get 1.5 lbs box for like $4 street food in china towns. Now? It's double or more in price. Pathetic!

I learned about letting the noodle air cool from a chef. I tried it myself and found it was really better.
