Thank you for talking about dried noodles. Dried Asian noodles have been an experience for me. From Pho to Mei Fun to Udon to Soba to Chow Mein to Lo Mein, the only noodles I can find locally are dried noodles. We have no fresh noodles here anywhere. So learning how to prepare unrefrigerated dried noodles and get them to just the right amount of soft but not mushy or sticky or slimy or gross has been quite the learning experience.

I’ve recently discovered ur site with the garlic noodles. Very delicious. Now I’m hooked on watching u create dishes. I’m 70 yrs old and first time I’ve had oyster sauce, sesame oil etc in my cupboard. I’ve often stir fried but didn’t have those wonderful ingredients which really make the dish. Thank you!

I'm glad you talk about the many types of noodle you could use with this dish. There are so many choices, but growing up, the one that my family used were the dried egg noodles that were size of a hockey puck. There was a picture of a chicken and eggs in front of the package and usually there were 10 "pucks" per bag. Fresh noodles are tougher because they tend to stick unless you give them a cold bath immediately after they're cooked. In any case, this is you made is a classic home-style dish. Thanks for making this video!

Hi. Thanks for the yummy recipes. I love dim sum in SF hole in the wall take out.... if you make dim sum, that would be great...hmmm maybe you have, I'll check. I'm writing to tell you a secret to getting thick sauces out of the bottle.
The trick is to forget about getting the sauce out, and consider how to best get AIR INTO the bottle. Hold the bottle almost horizontal, not upside down like you do. Hold so that the sauce only covers half the bottle opening. The sauce won't flow, but, air can easily get in. Now, holding bottle with one hand, tap vertically down, the neck of the bottle like a woodpecker.... tap tap tap. The horizontal allows air in, and tapping vigorously makes the sauce flow out. Takes practice, works great with any thick sauces. Make sure tapping makes the bottle neck move up and down... more is better. Lot faster once you get it. Super thick is of course harder, but focus on getting air in and not sauce out. Hope this helps
    Ross

This looks yummy! 😋😋 In fact, it reminds me of the noodles I get at my favourite Chinese takeout restaurant here, called "Le Chinois". They have a lunch special much like you described - rice or noodles, orange chicken or beef, stir-fried vegetables and rangoons. I'm hooked on the noodles - I always forgo the veggies and get double noodles. After seeing your video, I think I'll try to recreate the dish from "Le Chinois". It's slightly different in that it doesn't have chives. It has the onions and bell peppers. 😊😊
