I couldn’t find pan fried chow mein but I found regular chow mein in an Asian food store near me (I don’t know if it’s the same thing). I used a bag and a half of stir fry veggies. Caution if you are adverse to spiciness dial back on the sambal (I have kids that don’t like spicy). Dark soy sauce can be found under the name sweet soy sauce. I had to double the sauce since I used a 14oz box of noodles and the sauce couldn’t spread through the whole meal without doubling the recipe. I made mumbo chicken wings with it. It really was like take out. The chicken for the chow mein was so tender. Try this recipe!!!
Great recipe! Thank you. One little change I would make would be to fry the chicken in smaller batches. This way, the pan doesn’t get as crowded, and the chicken doesn’t basically boil. Great recipe otherwise!!!

You can try add in just 1-2 to 3/4 teaspoon of rice vinegar to brighten up the flavor which also cuts down the rich texture of the noodle. It won’t give the dish a sour/tart taste. Adding small amounts of acidity to dishes is usually for flavor brightening, taste balancing, cutting down the richness or smoothing the texture. The cornerstone of an Asian dish is the perfect balance of sweet, sour and savory with aromatic fragrance.
If your local supermarket has a oriental section then there is usually one or two kinds of those noodles there. I know that where I live my local Krogers has then, but they are usually kept in limited quanties so oftentimes they are out. If you can't find Chow Mein noodles you can always use other kinds of noodles. Udon, raman noodles (just don't use the sauce packet) or even itialian style noodles. Won't have the exact same taste but it will be decent.

This 'bowl' of noodles which is both soft and crispy is the unique aspect of chow mein, it is placed on the plate and the stir fry is then put inside it. Also traditionally the meat was first fried in a batter made from egg white and corn flour. This batter is thin and strong and the cornfour tenderizes the meat as it cooks. The fried meat is then added to the stir fried sauce and vegetables. This method of cooking the meat separately has disappeared from Chinese cooking atleast in restaurants in Australia where I live. Instead rstaurants add bi-carb of soda to meats like chicken and beef to tenderize them. I learnt about traditional chow mein from an ancient Chinese recipe book. Australia has a large Chinese community and chow mein in restaurants frequented by Chinese diners is always served with this crisp/soft noodles.
Ok your comment is a good place for me to comment on because you describe perfectly how Hong Kong style Chow Mein. What is presented here is great but I would not call it Chow Mein. Her dish does not have that crispy noodle layer because she tossed everything with sauce in the pan so all the noodles are soft. What she has made is LO MEIN and a nice one at that.

Great recipe! The comment about your husband liking the garlic that way cracked me up. I have similar modifications for dishes I make for my wife (e.g., I tie the herbs together for our soups and steep them so things like thyme leaves don't get stuck in her teeth). Can't wait to try this recipe!
