  • These fresh rice noodles are from China, they are called Ho Fun or Kway Teow. There are many ways to prepare them: in shrimp rice rolls, in salads, in a stir-fried dish or in a soup. They are better when they have just been prepared.

    Her recipe is 200 gm rice flour, 75 gm potato starch, 25 gm tapioca flour, 1/4 teasp salt, 600 ml water . Grease the non stick pan well and put it in the steam when hot, pour in enough batter to cover it. Steam 5 mins. Best is to use 2 trays. Or after removed the Ho fun out, quickly grease it again and put it back to the steamer, to save some time !

    Seems to be the best method for home making it. I've seen other RUclipsrs using special cloth and rubbish like that but this is by far the simplest and efficient way to do it.

    Thank you for this wonderful recipe. My grandmother made this when I was a child and never taught us children not my mom. I love this recipe for Ho Fun. It goes so well with chicken, vegetable, curry, bean sprouts, egg, and scallions. And it is healthy. I will show my granddaughter and grandson this video. They must know. 😊

    So happy I don't have to run to Chinatown to purchase these rice noodles that we love. I can now make my own. So many recipes I can make. One of my favorites is Beef Chow Fun. Fell in love with this dish while living in Hong Kong years ago. Many thanks.

    Hi Chef, looks so simple and easy to prepare. thanks alot sharing. but do you have yellow noodle that has alkaline water/ lye water and end up with veg. oil protecting it from dehydrating? very popular in SE Asian countries. thanks for sharing.

    This is one of the first things you notice about an Asian market: The many kinds of starches, and the many kinds of noodles made FROM those starches! In the US we pretty much have corn starch, and the noodles are almost all made from a kind of hard wheat, and that's about that. And then it all starts over when you look at the INSTANT noodles. We don't have much imagination in the states with staple foods, I'm sorry to say.

    Quiche pans have removable bottoms, which can cause the batter to leak. I am trying to find a large pie pan like yours on Amazon and google search. Morgane, can you help me find the exact or very close to what you are using so I can buy the pan and make my own Ho Fun noodle? I need a web link/site. Thanks

    hi, its hard to get potato starch and tapioca starch here in japan...so can i use only corn starch to replace the two types of starches, (*total corn starch is 100g and rice flour is 200g and for the water is it 60cc?)can i? thank you, ur receipe is good .

      Hi Lynn, yes you can put 100g of corn starch, 200g of rice flour and 60cl of wter for the batter.

      Microwave to thaw them! Then use them in stir-fry

      Nope! These are starch noodles, it's really thin sheets of a very thick pudding. Wheat noodles have beautiful gluten, made from elastic dough and not watery batter. There are wheat STARCH noodles made exactly as you see here, which are very nice, I've actually made them myself following RUclips videos . If you start with wheat flour you can wash out the starch, and you get a prize! The gluten is separated, and you can cook that, too. It's like magic, if you can tolerate gluten, or starch! In the US, plain wheat flour is one of the cheapest things in the store, and it's a treat to be able to make this nice dish from it.

    Good evening! Is it possible to replace tapioca starch with corn starch or additional potato starch? It's almost impossible to find tapioca here.

    Hor Fun & kway Tiao are slightly different, one is thinner & broader. The other is thicker & narrower

      If you have a potato, you can make it yourself! Seriously. If you grate potatoes (to make delicious fattening potato pancakes) and keep the juice, some white starch will settle out of that juice. It only takes a minute. It is sold in bags in Asian markets.
