  • Ho Fun Noodles are soft wide noodles used in stir fries like chow fun, pad see ew, drunken noodles, rad na, and noodle soups. They are typically sold in the refrigerated section of your local Asian grocery store but can often time be difficult to find fresh, depending on where you live in the world. Now you can make them at home with just a few ingredients.

    💡TIPS for making HO FUN NOODLES
    1. Strain the batter through a mesh strainer to remove any lumps.
    2. Stir the batter before pouring because the starches sink to the bottom.
    3. When oiling the pan, wipe away an excess or pooling of oil to prevent bubbles and pockets in the batter as it steams.
    4. Thin layer of batter is best. But too thin, the noodles will tear. Too thick and the noodles are not enjoyable to eat.
    5. You may have to rotate the pan a few times during the steaming to even out the forming noodle sheet if you are steaming on an uneven surface, for a more even noodle.
    6 . The more you make, the more you will develop your technique, and the better the noodles come out.
    7. Oil the noodle sheets well because they're sticky.
    8. If not using the same day, oil each sheet well, cut and lay strips flat, and staggered so they make peeling them easier when ready to use.
    9. Last about 2 days in the fridge.
    10. They will harden up after being in the fridge, but will soften up with heat.
    11. These noodles taste best if used the same day.
    12. There are many variations to make these noodles. Use this recipe as a base and feel free to make adjustments in the future, if you'd like.

    *Using a 10 in metal pan, each sheet required about 1/2 cup of batter. This produced about 8 noodles sheets in total.

    I used to work in H.K. as a domestic helper. Used to cooked this kind of noodles with beansprout and cha siw ( hehehe sorry for the wrong spelling 😁😁😁) . So good. I missed it.

    Great video presentation, love the natural elements. Okay, until today I didn't know I could even make my own rice noodles. I watched a video previous to yours but was not happy about the use of the microwave continuously. I use the microwave to heat foods to be sure but every once in a while I wonder if the heat I am feeling in my hand is leftover microwaves. Steaming agrees with me, as does your entire video, thank you

    I make these in the microwave if I’m tight on time. Gai Lan and Egg with soy sauce and white pepper and all of a sudden I have delicious pad see ew for dinner!

    Can you help me figure out why my noodle sheets come out back side still not smooth....? Is it because I didn't cook it long enough?

      It could be that you didn't cook it long enough or you put too much oil on the pan (excess should be wiped off). You should also strain the batter to remove any lumps. Stir the batter well in between pouring because the starches settle at the bottom.

    Use pizza cutter to roll onto the surface of noodles sheet from one side to the other save a lot of time!
