  • Today we are going to make Shrimp Cheung Fun (Steamed Rice Noodle Rolls Dim Sum Recipe). Talking about Cheung Fun (Rice Noodle Rolls), there are many ways to make it. And after testing different combinations of ingredients, I found the perfect way to make Cheung Fun. It’s silky, smooth, and slightly translucent. It’s over the top delicious!

    Serves: 4
    Prep time: 25 minutes
    Cook time: 20 minutes
    For the shrimp:
    5 ounces (12 to 16 pieces) medium shrimp, peeled and deveined
    Pinch of salt
    Pinch of white pepper
    ½ teaspoon rice wine
    ½ teaspoon sesame oil
    ½ teaspoon cornstarch
    1 ½ teaspoons water
    For the sauce:
    4 tablespoons hot water
    2 tablespoons sugar
    2 tablespoons soy sauce
    1 tablespoon dark soy sauce
    1 tablespoon oyster sauce
    ½ teaspoon sesame oil
    For the Cheung Fun:
    ½ cup rice flour
    2 tablespoons tapioca starch
    2 tablespoons wheat starch
    1 ½ cups water
    2 tablespoons avocado oil, separated, for brushing

    I have tried a few recipes online and they didn’t come out good. The consistency wasn’t good. I tried yours today and my entire family love it. Definitely I advised to use a nonstick bake pan to steam the cheung fun. It makes the folding so much easier. Thank you.

    I like Cheung fun roll very much, I've seen recipes that are not as clear and good are yours and are overwhelming.
    Your recipe is clear and easy and I know it's gonna be great❤!! If I don't find the wheat what can I substitute for?

      Thank you so much! I'm really happy to hear this feedback. You can find wheat starch in most Chinese supermarkets. It's a common starch for making many dim sum dishes. If you couldn’t find it, you can also replace it with 2 extra tablespoons of tapioca starch. :D

    I've been binge watching your videos. Would you be able to make sugar cane shrimp Chinese style like at Dim sum, or French style Filet Mignon, or Cantonese sizzling steak? Or my favorite Beef chow fun with black bean sauce? Sorry for asking for so much, hopefully I gave you some ideas for other videos. Shrimp won tons ? I'm a Dim Sum fanatic so I'm excited I found your channel. When I lived in Los Angeles I literally asked to volunteer in one of my favorite authentic Chinese restaurants but I think they thought I was kidding..idk? I took French cooking classes , which were great, but could never find Chinese cooking classes except very basic American Chinese with like 3 dishes. I also lived in Osaka so I learned quite alot of Japanese cooking when I was there but would really love to get better at Chinese. I have a new wok arriving soon and I'm ready to get my Chinese on. Great content!!!

    hi, I love cheung fun, is this how it is traditionally made or is it a re-imagining home friendly recipe? is there no msg or any spices involved? I'm just asking because I recall seeing it made in hong kong with pounded rice put onto a burning pan until it cooked

      There's a pan fried version which might have been what you saw? But I don't know about the pounded rice part..that sounds more like mochi. Those rolls tend to be skinnier with dried shrimp and you can sometimes find them in Asian grocery stores near the fresh noodles and tofu. This soft version is always steamed. In restaurants they have large specialized steamers instead. I can't speak to how authentic the batter recipe is though

    What can we use instead of dark soy sauce? What are your thoughts on using baking soda for the shrimp? I heard it makes the shrimp crunchy. Is cornstarch better?

    nice recipe just like the way that Cantonese Hong Kong 🇭🇰 style dim sum spots in Chinatown.... question for you. is it OK to substitute filling with Fish 🐟 instead of meat for those who are in pescetarian diet and celebrating lent around Easter in Springtime?????? I do remember few Chinatown hong kong style Cantonese dim sum spots serve fish cheung fun long ago before covid hit.... while I enjoyed dim sum with my friends, noticed customers next to our table ordered fish filled cheung fun as well. for fish cheung fun filling, do you guys use same paste that they make fish balls???? or just fish fillers with green onions and cilantro?????? just watching your video makes me craving for dim sum all of the sudden. haven't had dim sum for more than 2 years....

      @CiCi Li - Asian Home Cooking Even lobster 🦞 and scallops etc filling will work for sure... I would love to use lobster 🦞 and scallop filling to see how it works... may be just for experiments.... if Cantonese dim sum place offers and sells and prepares and makes lobster Chung fun, it would be most expensive cheung fun that would cost more than 10 bucks for sure...... I would imagine....

      It's doable, but the texture will be slightly different. Tapioca starch is available in most Asian supermarkets and on Amazon. I hope it works out! ☺️🙏

    The hard part is the Cheung fun bit. I tried to use a round cake tin and it didn't work and a round noodles bowl. Maybe I don't have the right utensils to make it.
