The best burger I have ever had was at the capital burger in DC and it was made from the offcuts of their in house dry aged steaks from their flagship steakhouse. It was simply amazing. Similar toppings.

I know it is blasphemy to speak ill at the alter of motz and his burger prep, but he needed to let it rest before biting into it. If he cross-sectioned it a minute off the pan it just would have lost all the juices so quickly. We can watch him burn his face off or watch him do a nice cross section on a steakhouse burger but not both imo
