Larry, you sold me on this when you dumped the stick of butter into the skillet! Then you put in the fresh lemons and limes and I knew I had to make this as soon as I can get myself to the fish market! I know clams don't go far. They are 3/4 shells, but the bits inside are like nuggets of nirvana! Thanks for showing us this (low carb) great recipe my friend!
Thank you John! To make this dish go a little further and be more cost effective, we could mix in a bag of mussels which are relatively cheap compared to clams and meatier!
I've always cooked them similar to this but I was looking for something slightly different and saw your recipe. I love spice, so I think I'll try the jalapenos this time and the lemons. Otherwise it was similar to my own version. P.S. a tip to ensure they don't have sand inside them is to soak them in cold water with a lot of salt in it to mimic sea water. They will naturally spit the sand out of their shells.

Now when I crave mussels and clams are in the case, I always get some of each...now Sir, my broth isn't as spicy as yours (though I do use red pepper flakes) but a good piece of toasted/grilled garlic bread is a a necessity for sopping up the broth, yum! I'm also told these mollusks (and other bivalves) are nutritionally significant sources of vitamins and minerals...say zinc and iron...umm, which I'm also told helps galvanize your parts..._>ahem
Ahhh fried clams, my absolute favorite way to eat clams!! Whole belly or clam strips, yummy! Yes this broth was on the spicy side when it came to sopping, but great for the clammage! You're right they do make some decent screw top wines now and even some in cans believe it or not...which is why I had to name drop to get my sarcasm across! Clams with unopened shells after cooking weren't dead before cooking (that's clams with OPEN shells that don't react to taps) Sometimes the heat causes the muscle to lock up instead of relaxing, which causes them to not open. They're still safe to eat, it's the clams that died before being cooked and so opened before cooking that you gotta worry about
