I always find cherrystone clams taste best sashimi (raw) style. They taste as fresh as the ocean water they come from. I always get them from fishers off the New England coast where the water is coldest.
you get the water w/ seasoning hot before adding the clams to cook on medium heat? you dont heat the water while the clams are added, right? thanks in advance!
As a kid we went clam digging and ate them right there at the beach. No washing or purging them. Dig up the clams and shuck and eat!

You need to scrub those clams with a brush running among the water don't do nothing

Never heard of anyone purging clams- you ruined them and the salt water is flavor. Same thing with crayfish
