Basic Chicken Curry (BIR) Indian Restaurant Style

Serves 2
1 Chef's spoon/ 2 Dessert spoons vegetable ghee / oil
2 bay leaves
Cassia Bark
3 Cardamom pods with shells cracked
1/2 teaspoon cumin seeds
1/2 teaspoon fennel seeds
1 + 1/2 medium onion
1/2 teaspoon salt
water as and when it dries out
6 medium sized chicken fillet strips
1 teaspoon ginger
1 teaspoon garlic
1 teaspoon turmeric
1 teaspoon curry powder
1/2 teaspoon garam masala
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
1/4 teaspoon chilli powder (mild/medium)
2 medium tomatoes chopped
1 chef spoon tomato puree

I like the idea of putting a list of ingredients esp if it is in a word format that I can copy and paste somewhere.Then I can easily retrieve when I go shopping. That is just my take and I like channels that do it.
I have seen quite a few videos inside Indian Restaurant kitchens and to be fair they have not been too bad. You go that extra mile and explain why you do what you do and how it affects the dish. I have been trying to cook a half decent curry for almost 40 years, and thanks to the generosity of guys like yourself I am closer than ever. I have liked and subscribe so I will be watching with interest. Thanks for sharing ;-)

Looks good to me, thanks! I needed a refresher on the spices and when to add them so that they sweat a bit. My wife loves a bit of bone, so I will adapt accordingly.

--What is vegetable ghee? Is it just another name for regular ghee? Or do you mean vegan ghee?
--I just checked to find East End curry powder (they call it Madras Curry), and see that they have a mild and a hot version. Which one do you use?
