- This is another of my favourite chicken curries, based on the curry that you get in small restaurants / dhabas in India. Hope you guys will enjoy making it.

Restaurant style chicken curry by Chetna
8-10 skinless, bone in chicken thighs
1 tsp salt
1 tsp turmeric
1 tsp mild chilli powder
3 cloves grated garlic
1 inch ginger grated
2 birdseye Chilli's
Ginger cut in thin strips (or grated)
3 medium onions, chopped finely
3 tomatoes, chopped
2 tbsp tomato paste
1 tbsp ground coriander
1 tbsp ground cumin
1 tsp mild chilli powder
½ tsp salt
1 tsp garam masala
Fresh coriander
Put chicken in a bowl, mix in salt, turmeric, garlic, ginger and chilli and leave 1 hour.
Fry onions and chilli in sunflower oil until onions golden.
Add tomatoes and tomato paste. Cook 10 minutes until well cooked.
Add coriander, cumin and chilli powders, and a good splash of water.
Shallow fry chicken pieces in oil only until golden, then drain.
Add chicken to sauce and coat with the sauce.
Add ½ tsp salt. Cook on low for 45 minutes.
Add 1 tsp garam masala and coriander

Chicken curry is my absolute favorite dish to order when going to an Indian restaurant here in the US. Wow, I had no idea that it was this easy to prepare it!!!! Made this last weekend - fabulous, and like other Chetna recipes, top drawer flavour and so easy if you follow the recipe. I used bone-in chicken breast chopped up, but otherwise followed the recipe, and it is TERREIRIC! Another winner, thank you, Chetna!

I made this tonight, it was delicious. Thanks for the recipe. I didn't have coriander powder, I put some curry powder instead, and I used plum tin tomatoes instead of fresh which seemed to work.
