Ingredients - Serves 5 to 6
* 1kg 250 gm chicken with bones
* 2 large/400 gm onions thinly sliced
* 20 gm ginger
* 25 gm/ 4 large cloves of garlic
* 150 gm/ 2 large tomatoes
* 2 to 3 fresh green chillies (optional)
* 1 cup/250 ml thick coconut milk. I used canned unsweetened coconut milk. Please shake can very well before using. You can go up to using 1 & 1/2 cups of coconut milk
* 1 cup hot water
* 2 tsp salt or as per taste
* 1 tsp garam masala powder
How To Make Garam Masala Powder - • 3 MUST HAVE HOMEMADE I...
* chopped coriander leaves
* 5 to 6 mint leaves
* 1 tbsp fresh lemon/lime juice
* 4 to 5 tbsp oil
For Spice Paste -
* 1 heaped teaspoon Kashmiri chilli powder. Can use paprika instead of chilli powder if you want to avoid the chilli heat or use less of chilli powder to start with.
* 1 tablespoon curry powder
How To Make Curry Powder At Home - • HOW TO MAKE CURRY POWD...
* 1/2 tsp turmeric powder
* 1/4 th cup water
Method -
* Crush or grate ginger and garlic
* In a bowl add chilli powder, curry powder, turmeric powder and water. Mix to make a paste
* heat oil in a pot, add sliced onion along with salt.
* Fry onions on medium high heat till they soften down
* Add crushed ginger and garlic. Fry for 2 to 3 mins
* Add chicken pieces and fry on medium high heat till they turn creamish brown I color
* Add the spice paste and fry for a few mins
* Add chopped tomatoes, salt, 4 tbsp water and fry on medium high heat till tomatoes turn mushy.
* add hot water, green chillies and cover for 30 mins or until chicken turns tender
* In between give a stir
* At 20 min mark remove lid and add garam masala powder
* Increase heat and decrease liquid if you want a thick gravy
* Add coconut milk, lower heat and simmer on medium low heat for about 5 mins
* Add chopped coriander, mint leaves and fresh lemon/lime juice after switching off heat
Serve this chicken curry with hot steamed rice/roti/naan with a vegetable curry as a side.
* Can be stored in refrigerator for about a week or can be frozen

Just made this, Bumbi. I’ve been making different curries for many years and have never used curry powder in a spice mix. (Curry powder has been exclusively used for Singapore vermicelli). However, it certainly works in this recipe. A fantastic result with the introduction of the Indonesian/Malaysian addition of thick coconut milk. Keep up the good work!

Looks absolutely delicious Bumbi. I just love coconutty curries. I am still without gas. Waiting for the faulty meter to be taken away for testing. Then hopefully soon I will have a new one. I bought a hotplate but it is very hard to control the temperature. It goes from one extreme to another with the heat. Looking forward to trying this wonderful curry my friend. This is exactly how I make my chicken curry, but I use coconut cream and also add tomato paste and jaggery.

This looks delicious❤ I have a question about the ginger. What we have available in the stores here is often very dry and not really appealing. Do you ever freeze yours? When I find some that is good I would like to be able to store it better so I am wondering if it should be frozen peel on or already scraped and cut into pieces? Thanks! 💕💕
You can freeze it with or without skin. You can grate frozen ginger though I find that bit tough. You can also cut them into little portions and freeze or peel them, wash and make a paste with little water or oil and freeze them in ice trays or in portions in small ziplock backs. Frozen ginger paste comes in handy very frequently.

Sure you can add kasoori methi but please add less , I would say not more than 1 tsp
Any curry needs to be thick. Even we use hands when squeezing limes

I'm a little lazy :) I wonder if it'd be as good using ready cooked drumsticks. Or maybe the chicken wouldn't pick up as much flaour not being turned with the onions and spice mix. Hmmm, I wonder 🤔
You can use cooked drumsticks but it won’t be as tasty as cooking it from scratch

What is the purpose of using that sort of pan? Could you explain
It is made of thick metal and has a flat bottom, which ensures even heat distribution across the cooking surface. This helps in cooking the food evenly and prevents it from getting burnt. Especially for Indian cooking where there is use of spices and probability of spices getting scorched is very high.
I was wondering why you squeeze the lemon juice into your hand.
