    Hey Victor, we call them garfish in Australia. We clean the gut then with an old tooth brush clean theblack stuff inside. Roll them flat with a wine bottle or roller salt and deep fry. Don’t worry about the bones they would be very crunchy. Trust me I have done it many time. Let me know how did u go?

      try gar fish donuts, really good!
      scale
      squish guts out
      roll with pin roller or wine bottle
      punch a hole straight through fish near tail
      poke the beak through the hole
      flour and deep fry

      Tristan Behrens there are 26 species of gar fish. They are from fresh water gar of 10cm maximum to oceanic one which I catch here in The Gold Coast AU. The one we catch in ocean very similar but grow to up to 60cm. We eat the big one and use small one up to 30cm for trolling for Spanish Mackerel ( we call it Spanish Mackerel in AU and called king mackerel in US).
      What is called Spanish Mackerel in US we call spotted Mackerel. I hope this explains everything and not further confuse you :(

    We actually tried a ballyhoo. We cook random fish for our dog since he’s insistent he always wants to eat certain fish especially ballyhoo and squid while we’re fishing. So when we cooked the ballyhoo, we gutted and scaled them and removed the head and cut it straight in half down the center, then cooked it. All those bones, peel off super easy like skin after it’s lightly cooked. We did almost the same recipe. We sampled a small piece to see what the hype was about since the fish love it and the dog loves it. And honestly it was surprisingly good. But you get much more meat when you cook it before deboning.

    Victor, love the videos! My girlfriend and I are true fans all the way from South Texas! Having the opportunity to fish northern Mexico (Playa Bagdad in Northern Tamaulipas) you would be surprised what people with different cultures eat. Mullet ceviche is so common down there and it is extremely good! We need to adapt and people make due with what is available to them. Much blessings to you and Brook! Keep those videos coming!

    Greetings from Australia. As mentioned by others, we have a similar species here that we call garfish. I purposely chase them to eat coz they are delicious! How I prepare them is to scale them, take off the fillets like you did, (leave the skin on) then I use an ultra sharp very thin tip of a filleting blade to cut the rib cage bones out. Don’t worry about the pin bones coz they sort of ‘melt out’ with cooking. Cut each fillet into two pieces, dip in flour, egg and then a mix of 1/2 bread crumbs n 1/2 fine greater Parmesan cheese. Quickly deep fry n enjoy!

    In my village we call a ballyhoo "Twene" and that parasite thing is called "Pale" or "Manvua". Nice video, as always!

    Hey bro. the best what to cook ballyhoo is to take off the scales and gut it then make a small hole around 1 centimetre away from the tail then poke the "bill" through the hole. after you do that put them in a bag with flour and seasonings of your preference then deep fry them. then once you straighten them out the curled meat falls off the straight bone. and that way you get a good amount of meat.

    Ballyhoo look quite a bit like the garfish we get in South Australia, only our gar are more elongated and have a great table fish reputation. Great stuff 👍

    Many fish classed as trash fish are often just more work to prepare. We have a similar fish here and people eat them and they taste good.

    Pickle them. The acid will make bones soft. We do smelt. Clean, dust with seasoned flours, remove from fryer. Pack them in pickling jars and pour pickling liquid over.

    We used to catch them by hand back home South Coast Western Australia. They get washed up into rock pools on head lands down there. We call them Garfish as I think a few others have mentioned. Great way to get kids into fishing

    Try eating threadfin herring, pilchards and pinfish....fried whole in seasoned oil (put 3 crushed gloves of garlic, a few allspice berries, 1 or 2 crushed scotch bonnet peppers or jabbanero peppers in hot oil) fried till golden brown...then serve them topped with escovitch sauce which is a chunky sauce made with cane vinegar, sliced onions, thinly sliced ginger, carrots, cho cho, jabbanero peppers and a few allspice berries .....enjoy this fried fish with bread, or fried bammies (cassava cakes) or festivals which is a fried fluffy dumplings ....excellent!!

    Excellent for fish oil....fried them whole when I was younger....they yield a lot of fish oil...taste like sardines with the skin on....definitely have lots of fibrous bones that you could work around....they are nutritious forage fish for all predatory fish out there....great video man'...

    In Hawaii there known as syote , Just scale it, gut it, filet it , salt,pepper,roll in corn starch and fry to golden brown. The spine same thing make sure crispy and eat.

    @landsharkfishing Sting Ray is actually really good! I had it years ago when I was stationed in Grand Isle, La. we did a fish fry with Flounder, Specs, Red fish, Mullet, and a random stingray. As it turns out, the stingray was one of my favorites of them all.

    mate; In Australia the fish you call ballyhoo we call Garfish and they are very good and flavourful. you need to fillet them differently and you get more meat and little bone. if you get bone are able to eat them bone and all. if you have worms in fish! place them into some apple vinegar and they come out of the fish. cook well.

    As mentioned before we call them Garfish here in Australia, it’s a bit of work but you can also have them sashimi and it’s surprisingly yummy! Also you can peel the skin off

    Hey Vik, I have an idea for getting as much meat from the ballyhoo as possible, I did this the night before I went offshore. Take the ballyhoo, cut off the head, squeeze the poop from it, then the spine will come straight out if grabbed with something and pulled.

    Ballyhoo are amazing great to eat. We eat them all the time, prepared differently pretty much the whole fillet. Our ballyhoo are smaller so you the bones just add crunch.

    Call me an overly fussy Brit, but the moment I see worms in a fish, I dont it any more. That one would have been comdemned to be frozen bait, I'm affraid. Not that I eat much fish any longer, anyway.

      News flash. All fish have worms and parasites. I took a fish class in vet school, every organ pretty much has some sort of worm or parasite in it. Just cook your food!!

      And that, my friends, is why we fully cook our fish. Not only does it kill most harmful bacteria, but also kills any harmful parasites that may/may not be in the meat....... same reason we fully cook pork and poultry (although poultry is mostly by law)

    I’m going to pick up a shirt for the wife and for for myself tonight! How about doing a blind folded taste test of different bait fish? Pogy, thread herring, ballyhoo , croakers etc and see which one taste the best.

    we eat those in the Caribbean, usually fried whole or in a fish broth. Try it out bro. Fry it whole and you'll see how amazing it tastes.

    Great Video. Have you ever tried Grunts? I grew up eating Skate and/or Rays. Unfortunately you don't know the current name when buying in a supermarket. I have only consumed the wings so I am not sure of the bodies. We stew it in a tomato sauce spice or plain. The meat has a texture and taste very similar to Blue Claw Crab.. Now I have to go out to the store and see if they have any.

    Next time you're in the Bahamas (or in the Amazon?) You should definitely try Tarpon. They're obviously protected in the states but I know people eat them somewhere and who better than yourself to try it and show us what that's all about.
